newly diagnosed Type one diabetes -disney in december any tips?

My son was diagnosed 5 years ago when he was 12. I know what your going thru right now, it's overwhelming! Things will get easier, maybe easier isn't the right word, maybe calmer or more understanding is better. The more you learn and know the more manageable it will get. After several months you will know the approximate carb count on stuff your child eats by heart. Most of the time children eat the same foods, by December you will be just fine!
 
So my 13 year old - who is already status post liver transplant (10 years ago) just got diagnosed with type one diabetes this week.
We have a trip to disney already planned in December - and now i am especially glad we're going because I feel like we really deserve it. Ironically her dad has been to disney with us 3 times and I never worried about his diabetes because he just eyeballs his food and makes a carb guess. I know all the walking made his blood sugar go lower.
Anyway right now we are just getting started with her carb counting etc. and it's a lot. Hopefully by the time our trip comes we will be pro's - but in general i am wondering - are there resources people have used for disney and carb counting/type one diabetes? anyone been there/done that and have tips for us?

We have been several times since our DD was diagnosed with T1. Unfortunately, if the food is not prepackaged there are no carb counts available. What we have found that helps us are a few things:

1 - Our DD (diagnosed in 2010, she is now 13) typically eats the same types of food, so knowing the carb counts for those are pretty easy and I am sure you will find the same with your DD
2 - We do use My Fitness Pal or Calorie King for checking carbs (on our smartphones)
3 - We are now comfortable eyeing serving sizes when needed, but we do measure and weigh when we can. I also carry collapsible measuring cups, great to help with carb counting for ice cream, pasta, rice etc.
4 - I have learned that a serving of popcorn fits nicely in a sandwich size ziploc bag and is about 14 carbs
5 - When we had to carry insulin pens with us, I would freeze grapes and put them in a ziploc bag, then carry them with the insulin in a cooler bag - this would keep the insulin cool and we would have a pre-measured snack available when she wanted some. (I would freeze a couple of bags of grapes to carry with us) - Also a great idea for the plane ride (if you are traveling by plane, as you are not allowed an ice pack)
6 - We love to use single serve powder mixes to add to water, good way to have a carb free drink on the go.
