newbie plan, help please

We (me with DH, DD10, DD8 and DS6) are visiting April1-4 and staying at the HRH.

We are arriving via plane at 1:30 to MCO and renting a car to take to Universal. My guess is that after getting luggage and car we should arrive at HRH between 3 and 4.

My plan for the first night was to check in, let the kids play in the pool and go to City Walk for dinner at Margaritaville.

Monday we would be up early to be at early entry for IoA to visit WWOHP. We'd do Ollivanders first.
My question involves FJ. All kids (and I) are HP fans. DH not so much. But he doesn't like rides and the two younger kids are not tall enough to ride. They do want to see the castle tour. Can we go the regular ride line as a group, keep our bag, and then send DH with younger two kids out when I board ride with my older daughter? Should he just do castle tour with the two young ones? I was thinking it might be nices to do the tour together. Thoughts?

Also, we have a voucher for Three Broomsticks breakfast, which goes until 10:30. According to all the people I talk to at Universal Dinin, there are no longer reservations for this breakfast. Should we do WWOHP from 8 to 10 and then head to breakfast at Three Broomsticks? Any thoughts on the timing for this?
(I also have an 11:30 lunch reservation at Mythos. Made this before realizing the breakfast we would get with the package. - should we just skip this, or maybe go for a snack if we do breakfast earlier at Broomsticks?)

After HP, we were going to do Lost Continent and Suess Landing before heading back for pool break in the early/mid afternoon.
We would then head back to IoA for dinner and stay until around 8 or 9.

The next day (Tuesday) we planned on US with a break in the middle of the day for the pool again. We have dinner reservations at Pat O-Briens at 6:15.

Wednesday we were going to check out and head to SeaWorld, and then leave for Boca Raton to see my parents from Sea World in the late afternoon.

How does this sound?
Should I go for park hopper tix? How about a third day of tix for Sunday? Do you think we will be bored just hanging out at the pool and City Walk the first night? I do have to be careful keeping the kids up too late since we are traveling that day, and also because my husband does not like to run around too much on vacation.

Any help/tips/opinions are really appreciated.

I'll answer the part I know: Yes, the whole group can go through with your bags and little ones. Tell any TM who asks that you have a non-rider in your group and they should let you be. DH and the little ones will be able to see everything in the tour with you except the Sorting Hat, which is just before the boarding area. They will be shown a door just before that which will lead them to the stairs down to the exit in Filch's Emporium.

Good call on Ollivander's. If you're interested in doing it, go as early as possible and do it before anything else.
