Newbie here! Should we follow a touring plan?

I'm a "wing it" type of person.

How do you think these touring plans get made? Someone learned by experience.

So take the experience .. and enjoy. Grab a map plot out a logical course .. and just go what suits you and be sure to STOP and smell the roses. Stop and see those shows in the street. Check out a store if you are in the area.

Just remember .. you cant' do it all and just enjoy what YOU want to do.

We've never used a tour plan site and yet somehow manage to see everything we want.
But to each their own. As you can see, OP, some folks swear by them.
 
As others have said, I think it's very helpful to have a plan for the morning -- that's when you will get to do the most attractions with the shortest wait. After that, for the crowded afternoons, having a general idea of where you want to be is helpful in order to avoid what a pp called the "i dunno, what do YOU want to do?" syndrome. I've also found that lunch time is a great time to eat a sit down, table service, as it is often cheaper than dinners at the same place and it allows you to get out of the heat and rest for a bit around midday.

And as shocking as I found it to be, I have also experienced "the POOL!!!" as my kids "most favorite" thing at disney. Go figure. Plan accordingly.
 
A lot of good advice so far. I'll just add that we hit the park at RD and follow a plan until lunch. That allows you to get in the maximum number of rides, relax at lunch, and then hit the remainder of your FP reservations afterwards. That's also a good time to go sit down and catch a parade or head back to the pool. We'll return in the evening for a nice TS dinner and then have free time to: shop, wander around, catch some low-priority rides, and just enjoy the parks.

If you follow a good plan (love EasyWDW) you can do more before lunch than everyone else that arrives later can do in the entire day (well, amost!). And then you have time to explore and go where the magic takes you.
