Newbie Dining Reservation Question

We have never made dining reservations as we have always camped and ate our meals at Ft Wilderness at the camper. Going on trip week of Thanksgiving. No dining plan but trying to make one "main" meal a day reservation. At this time I am not sure if there will be 2 or 3 of us. Is it better/easier to make reservation for 3 and cancel one person if needed or make reservation for 2 and add one person if needed.
 
Make it for 3. If one doesn't show up, NBD and they won't charge you the no show fee if at least one person goes. On the other hand if you make it for 2 and want to take a third, they may or may not be able to add the third.

Also - When doing just one "main" meal of the day I usually shoot for a very late lunch/early dinner (3-5ish) there are so many snacks in the morning that can hold you over and 3-5 seems to bee some of the busiest times at the parks lately. Otherwise we do a true late lunch like at 1ish and just have a snack later
