New Years Eve/Day Menus

When you know you make a ton of healthy dinners...

Kids literally said they wanted my all-beef hot dogs with the fixin's and onion rings for New Year's Eve. B/c that seemed lacking, I am adding a cocktail shrimp ring and a multi-fruit tray with dip. And I bought them Christmas clearance hot chocolate bombs and macarons for the ball drop (I'm skipping both, but I can actually eat the whole dinner).

I guess I should keep up the uber-healthy meals all year so I always get NYE effectively off...

PS - It's been about 8-9 months since we've had hot dogs, so I do understand the appeal. I'm making a (vegan) sweet potato and black bean chili today with blackberries/clementines/grape fruit salad and Tostitos for the kids (spouse's 1st response was he wanted chili, so I did cover that)...
 
New Years Eve - I am planning to make a chicken and shrimp lo mein. Newish recipe that I cannot get enough of.

New Years Day - I will be doing a standing rib roast, mashed potatoes with gravy, and a veg (probably spinach).
 
We always have frozen junk food for New Year's Eve -- popcorn shrimp, pot stickers, mini corn dogs, mini quiche, etc.
We were in Disneyland for Christmas so we're having our traditional Christmas dinner on New Year's Day: lasagne, greens beans with onions and bacon, and garlic bread. I'll be adding the traditional black-eyed peas and cabbage.
 
We settled on cheese fondue and ???? On NYE. NY day? Probably nothing special. Leftovers I guess.
 

I wasn’t planning on anything special for NYE, just NYD, but I found my favorite frozen spanakopita at the grocery today, along with a new flavor of Wheat Thins, so since I have meat and cheese already, I am doing an appetizer night. I usually just hang out at the house with a good movie or book, so this works.
 
We are having kind of a carry in here, so I am not sure what everybody is bringing. We are making some meatballs in the crockpot.
 
We're doing cheese fondue and fried appetizers. There will be bread, apples, potstickers, taquitos, and maybe tater tots.
 
We always do finger foods on NYE. We will probably hit up Costco later today, but a few things I expect to be on the menu...

- Crab Rangoon Dip - I've never made it before, but it looked like something everyone would like.
- Smoked Salmon - Not sure if we'll get some kind of toast points or bagel type fixings to go with it.
- Latkes - Last night was latke night and with Chanukah coinciding with New Year's, we'll surely have some.
Care to share your crab Rangoon dip recipe? That sounds fantastic!
 
NYE is various appetizers and finger foods for dinner and then later again starting about 10pm.

NYD used to be roast pork and sauerkraut but we got bored with that so for the past 5 or 6 years it’s been prime rib or other roast beef.
 
I'm thawing out my pork tenderloin right now. It's a long (6-8 hours) Crockpot day tomorrow with bagged sauerkraut, apple, chopped red onion and minced fresh garlic. I plan on making mashed potatoes as well.

I just finished making my cucumber/tomato salad so that will sit overnight to soak in the vinegar and dill.
 
Care to share your crab Rangoon dip recipe? That sounds fantastic!

This will be our first time trying it, but it sounded amazing. DH and our girls love crab rangoon, but had never thought about it in a deconstructed dip. It sounds a little bit cheesier and spicier/tangier than the actual dish, but it still sounds good.

Ingredients:
2 (8oz) blocks cream cheese softened to room temp
1 bunch of green onions, sliced (reserve 2 tbsp for topping)
1/4 of mayo (say light mayo but I'm using what we have)
1 cup monterrey jack cheese, shredded
1 cup mozzarella, shredded
3 cloves garlic, minced
1/2 lemon, zest + juice
2 tsp sriracha
2 tsp soy sauce
8oz imitation crabmeat, roughly chopped
Cooking spray

For garnish:
Asian-Style sweet chili sauce
Green Onions (from reserve above)
Sesame seeds

Serve with:
Wonton Chips
(alt. crackers or toasted bread)

Instructions:
1. Preheat oven to 375 F. Spray 1.5 qt baking dish with cooking spray.
2. Stir together softened cream cheese, green onions, mayo, half cup of each of the grated cheeses, lemon zest and juice, sriracha and soy sauce. Gently fold in crabmeat and transfer mixture to baking dish.
3. Top with rest of cheese (says you can use more if you'd like)
4. Place in preheated oven to bake for 40 minutes. Broil the last 3-4 minutes for a golden-brown top. Let stand for 5 minutes.
5. Drizzle sweet chili sauce over the top of dip and garnish with rest of green onions and sesame seeds. Serve with chip, cracker, etc. of choice.

*For wonton chips, you will likely need to buy wonton wrappers and make your own. There are a number of DIY recipes out there that involve everything from pan frying and deep frying to baking or an air fryer.
 
So I am doing apps and snacks tonight and nothing special tomorrow (likely just leftovers).

Tonight I am having:
Pigs in a blanket
Cheese and crackers (swiss, pepperjack, and a cheddar cheese ball)
Liver sausage and summer sausage
Jalapeno and cream cheese wontons
Spinach dip and brown bread
 
Tonight we'll get Chinese take out. Tomorrow is pulled chicken on buns, pasta salad, tossed salad, and left-over Christmas cookies/bars.

happy new years one and all! as I survey my fridge we have Papa Murphy's leftovers from last night as well as cottage pie from the night before so plenty to nosh on today/this evening. I think I may do a simple pasta bake later to supplement. I plan to start the new year working my way through the existing (non Thanksgiving/Christmas) leftover/double batch's in the freezer. it will be interesting to see how long I can go without any non produce/dairy related grocery shopping :thumbsup2
 
I went to a friends for dinner last night. We had shrimp cocktail and cheese for apps. We had a pork roast, shrimp, sweet potatoes, roasted veggies, risotto, and rolls for dinner. Followed by cheesecake.

I have no idea what we are having today. I’m making sauce now. I took a bunch of the jars of tomatoes I canned at the end of the summer and I’m turning them into sauce and rescanning them. So maybe pasta?
 
My brother's family is arriving today.
Thanks to grocery store sales, we're having a (poor man's) surf and turf with the loss leader strip steak (would have been all steak, but the price was pound limited) and the cocktail shrimp ring. We'll also have my allergy-free mashed potatoes, some caramelized onions/peppers/mushrooms (all separate so folks can choose their veg) and red wine sauce for the steak, a multi-veggie make your own salad with homemade croutons, and a raspberry (Target)/blueberry/apple fruit tray (my nephew does not like food touching and has high food sensitivity, so the trays and make-your-own are perfect for him). For dessert, we're celebrating 2 of his families birthdays (and they hate chocolate base), so we have strawberry cake mix cookies and Trader Joe's blondies (the favorite flavors for each birthday). More than I ever do New Year's, but I think I'll be able to skip cooking on Jan 2.

I made it last night. It was good but the consistency was all wrong and the taste was off. I think if I do it again, I’d double the cream cheese, add a bit more mayo, cut the shredded cheese by at least half, and bake on a lower temp for a shorter period.
 
My mother always gave us herring on New Years Eve/day. I bought some for myself, DH won’t eat it!
