New Orleans late sail away questions

We are looking at a January cruise out of New Orleans. I notice all aboard is at 8:00 pm. Does anyone have an idea what the port arrival times would be? I assume late departure is due to ship getting there later that day so maybe PATs would be like 3-4ish? Just trying to figure in my head how they would time muster drill, dinners, sail away. Kind of a bummer as I was looking forward to watching the sights down the river but guessing we won’t see as much in the dark.
 
Sunset in NOLA January is 5:30 pm-ish so you wouldn't see much of the bayou even if you left earlier & it takes about 8 hours so you'll be out in the gulf when you wake up.

Yeah that’s what I figured. Just not sure what PATs will be and how they will work in muster, dinner, sail away if people still getting on ship until 8. I would love to have more time on ship if they had PATs at like 1-2. But if not at least New Orleans is nice place to hang out that day!
