The old "kids won't remember it, don't take them until their seven" mantra is really for adults who can't imagine enjoying WDW themselves. Who cares if the kid "remembers" it-- don't you need a vacation? Just because you are new parents doesn't mean the trip is only for your kid, it's for you too!
Many new parents need a vacation, and few of them would leave a young child behind-- and there is no more family-friendly vacation place then WDW. There is so much, even for babies and toddlers.
The main thing is to take lots of breaks. But you knew that.
