Nevermind, sry

I'm reduced to eating Wheat thins! There's not that much left in my drawer - 12 workdays left before I kiss this job goodbye!
 
I'm feeling cruddy, my throat hurts so I just want a nice cup of hot tea.... wonder if I have a rogue tea bag in my drawer
 

Ooooooooo..... chocolate. Might have to eat some of the M&M's that I have stashed for DS in case he chooses to use the potty. :thumbsup2
 
Well now the cookies are all mysteriously gone. :rolleyes1

Yeah, that's the problem with emergency stashes, once you eat them you're out of a stash. :confused3

or these new fangled banana chips from Nabisco. They are called Garden Harvest. Good lord those are awesome!!!!!
 
OOOOOooooo- I forgot I had Girl Scout Thin Mints in the freezer.... uh oh... there goes my resolve to eat better.

Mmmmm . . . girl scout cookies. I only bought one box this year of the Tagalongs and those are long gone.
 
1 box Regular Ritz crackers (not the reduced fat or reduced sodium ones)
1 lb dark chocolate melt n mold (I'm really not fond of Wiltons so I don't use those, I use ones from Arrow Paper Supply)
2 tsp real Peppermint extract (or more, depends on how minty you want it)
1 box round toothpicks
wax paper
2 jelly roll pans or cookie sheets

step 1:
melt chocolate either in 10 cup measuring cup, glass bowl, or double boiler. I prefer the measuring cup because if I run out of time I can just throw cellophane over it and pop it in the fridge for later.

step 2:
add peppermint and stir, have someone else taste test the chocolate because all you will smell is peppermint.

step 3:
place wax paper on cookie sheets.

step 4:
stick toothpicks in the center hole of the ritz crackers. Be careful that the crackers don't break. some will though. I do about 1/2 a tube at a time before dipping. It goes faster.

step 5:
swirl crackers in chocolate, tap toothpick on the edge of bowl to remove excess. Twist toothpick while holding cracker slightly over cookie sheet. The cracker should release. Use a soft spatula/spreader to fill the whole in if you want.

repeat until tray is full. Place cookie sheet in freezer while doing the second tray. When second tray is done transfer the cookies from tray 1 into a ziploc bag and return to freezer. continue until, well forever!!!! They will fly out of the house in no time. DH says they taste better than the real GS cookies.

Next time I make them I will try to add pics. Maybe that's what I'll do this weekend.
