I consulted my Unofficial Guide to WDW 2004 and it reads like this (if you don't have one, get one--page 41):
Least Crowded Days: From Sept through May (excluding holidays and typical spring break weeks), Saturday and Sunday are the most crowded days, while during summer the opposite is true (locals stay home and out of state guests use Friday, Saturday and Sunday for traveling).
MK: At the MK, Friday and Saturday are least crowded in the summer, and Friday and Wednesday are least crowded during the rest of the year.
MGM: At MGM, Monday and Friday are best during summer. During the off-season, try Thursday and Friday.
Epcot: Monday and Thursday are least crowded from January through May, as well as in November and December. During summer, crowds are smaller on Saturday and Sunday. In September and October, when school groups inundate Epcot, also visit on Saturday and Sunday.
AK: High or low season, visit the AK on Tuesday, Thursday or Saturday.
EE days are as follows:
MK: Thursday and Sunday
Epcot: Wednesday
MGM: Tuesday and Saturday
AK: Monday and Friday
