Need suggestions for stuff to do w/no kids

Our 2 girls are going to a basketball tournament at WWS, and DH and I are going too. We will go watch the games, but will also have 4 days of park tickets (no hoppers if I read the package details right). The girls will want to hang out with their teammates in the parks, so DH and I are looking for new things to see and do on our own. We don't drink, and we don't want to do the extra tours KTTK, etc simply because we are trying to keep the costs to what the package includes.

We have both been to all 4 parks before, but I am MUCH more excited about all things Disney than he is. I'm pretty excited that we will be there the week after Christmas since I've heard about the special stuff at EP. That is my big "must do", and it will take up at least 1 park day, but what are your other suggestions?
 
If you're going to be there at Christmas time, then I definitely recommend checking out the World Showcase at Epcot. Even if you don't drink, there are plenty of seasonal treats to try, plus regional Christmas traditions in the form of performances in the various countries. You could also check out the Candlelight Processional, though I'd recommend trying to get a dining package for that, since the standby lines can be brutal.

I'd also recommend taking some time to resort hop and check out the various decorations and trees at the resorts. Some of them will start to come down right after Christmas, but if you're there the immediate week after, you should still be able to see a bunch of them. Last year, Disney Springs also had a Christmas Tree Trail, that featured trees themed after various Disney movies, which remained up until early January. I'm not sure they'll have it again this year, but if they do, it's worth checking out.
 
I second going to visit the resorts. I have yet to see the Christmas decorations in person, but I hear they are amazing. And check out Disney Springs in your free time.
 
It depends on what you are into:
sports: golf, mini-golf, fishing, marathon, bowling, ESPN Club, WWS/ESPN Zone, etc
shopping: DTD, area outlet malls, large scale malls
drinking: Jellyrolls, Raglan Road, monorail tour of resorts, walking tour of resorts in the Boardwalk area
movies: DTD 24 screen theater some with meals served by waiters
night clubbing: Jellyrolls, Atlantic Dance, Raglan Road, Citywalk
resort tours: monorail tour of resorts, Boardwalk around the lake tour of resorts, horse drawn tour of FWC, AKL/AKV
offsite: Gaylord Palms Resort, Citywalk, swamp tour
eating: Formal GF 5* Chef's Table @ V&As
