Need suggestions for DS 17 bday

We will be in FL for DS 17 birthday. DH has a conference at the Omni Champions Gate and we are going to 'come along'. We're going to Don Cesar in St. Pete for 2 days prior, then to Omni in Orlando. DD, DS and I aren't planning on doing Theme Parks. So far our activities planned are: Shopping - DS wants to go to the Adidas Outlet; Disney Quest; Sky Venture - DD wants to do this; and we'll meet up with family from Lakeland to go to Orlando Paintball. We also need to go to the Motorcycle shops to buy him boots & a jacket which is what he wants for his Birthday and there are no dealers here that have them so he can try them on. The rest of the week we plan on hanging out at the hotel.

So, does anyone have any suggestions on something wonderful to do for his 17th Birthday?

What type of activities does he like?? Would he like something like Discovery Cove, Parasailing, Jet Skiing, Swimming w/ the Manatee's, Doing a Nascar Ride-along? These would all be great memories for a birthday.

We have stayed at both of the resorts that you are planning. The Pink Palace will likely be more of a DD favorite. My DD and I went there New Year's Eve. My DS17 thought that the Omni is the best resort ever until our recent visit to Portofino Bay Hotel for Universal's Grad Bash. If ya'll aren't going to the parks I would consider lunch at NBA City or DS's friend 17 loved Emeril's Tchoup Chop at Royal Pacific.
