Need some advice

Ok. We two and a half weeks in the USA next May. The ordinal plan was 1 week in Vegas and then 1 week on a rci cruise from galverston. And then the last two days at Disneyland. It looks like we won't get the suite we want on the cruise (as another child will now be joining us). I hadn't booked the cruise yet as I was waiting to see how we liked the one we are going on in November. And also get a better deal. I always new there would be a risk that the rooms I wanted would be sold out.

So now I am unsure what to do instead.

Option 1

1 week Vegas (we are meeting friends so that cannot change)
1 week in Orlando doing universal and discovery cove again
2 days at Disneyland before heading home

Option 2
Vegas
Disney cruise
Universal studios
Disneyland 2 days

Option 3
Vegas
Spend 5 days driving around Grand Canyon etc
4 days Disneyland

We will be doing 3 weeks in wdw in 2017 so am happy to skip it next year, unless they have free dining but I don't think they do it in May.

DH. Doesn't want it to be rushed so have to make sure there isn't to much packed in.
Would love some suggestions
 
I'd probably do option 2 because you still get a cruise. I'm more into 'doing' than 'seeing' though, so Grand Canyon etc would be a bit boring for me. We did 2 nights at Grand Canyon. It is ok to see but 2 nights there was too much.
Just keep in mind late May/early June at Disneyland will have Grad nights. I'd keep away from these if you possibly can.

What are grad nights?
 
They are nights put on by Disneyland where the kids who are graduating high school get a special ticket. It allows them entry to the parks for that day, and then a grad night party at DCA after about 8pm I think.
We were there on a couple of the days, and while we don't mind kids (we had 2 of our own) they were quite painful. Lots of large groups of kids walking around together, some quite loud. My kids were a bit scared when a group came and barged through behind us as we were walking through the park. We also missed out on one of our Photopass photos on Space because the kid behind us stuck his finger up (they won't allow you to even see the photo, let alone buy it). The CM was great though and took us back to the front of the line to ride again.
Just something to consider if you can play around with your days.
 

Tash - Remind me again how old your kids are? And have you been to Arizona before?
 
I'd do option two, but without the cruise, but I'm not a boat kind of girl.
