However, one of the stipulations of me being home was that we were going to cut back on the spending.

I'm looking online, but I'm not too good at this cooking from scratch thing yet....
 
American Chop Suey - Macaroni w/ meat sauce

Hard to suggest, what do you have in the house? Pasta is quick and easy.

Spaghetti is pretty easy to make, so is something like baked chicken.

My DT are in kindergarden, so I pretty much have the house to myself for a couple of hours. ;)

Pasta, spaghetti - always is quick & easy. I keep a box of garlic bread or Pillsburg french loaf or cresent rolls on hand to make with it.

I'm in the same boat, I'm home today so I feel I should make something nice for dinner. I've got chicken breasts, beef roast & pork roasts in the freezer, but we had all 3 last week. Had chicken tacos too, and spaghetti. Looking for something different, preferably with the chicken breasts. We're tired of breaded, or marinated, not sure what else to do with them. Any help?

Here's a chicken breast recipe my family loves:

Boneless chicken breast (1 breast per person)
1 can of stewed tomatoes
1 can of diced tomatoes
1 diced green pepper
1 large diced onion
1 can mushrooms (if you like them)
bake in the oven at 450 for 40 minutes.

I usually serve with some type of pasta!
 
This is one of our favorites and it can be done in the crockpot as well:

Sweet and Sour Chicken
4 - 6 boneless chicken breast
1 jar apricot preserves
1 bottle Catalina or red french dressing
1 packet of onion soup mix

preheat oven to 350.

place chicken in a baking dish and bake for 30 minutes.

mix remaining ingredients in a bowl, set aside.

remove from oven and drain juice off.

pour sauce over chicken and bake another 20 - 30 minutes.

serve with rice and a vegetable.

***If you want to do this in the crockpot, place everything in pot and cook on low 4 - 5 hours.
 
my deli at home makes a sandwich called a lumberjack which is incredible. I make them here at college a lot, and its easy!

It is a garlic bread hero, breaded chicken cutlet, bacon and mozz. (the deli adds mayo, lettuce, & tomato, I take them off)

Get a good roll or hero (i think heros are also called subs. the long rolls), butter and garlic salt on it, toast that.

make the breaded chicken cutlets.

make the bacon.

put the breaded chicken cutlet on a plate, slices of mozz cheese on top (i buy the square of polly-o and cut it), put the bacon on top of the cheese.

microwave that for about 40 seconds...until the cheese melts.

slide that onto the toasted garlic bread hero!

These are DELICIOUS :)
 
I just made a pot of chili. I used a Rachael Ray recipe, and it only took 30 minutes to prepare. Let me know if you want the recipe. :)
 
I reallly love this chicken dish, you can serve it over a salad or over cous cous or rice.
You will need~
Olive oil
Chicken cutlets
Parm. cheese
Panko bread crumbs (regular are ok too but panko makes it extra crunchy!)
eggs
fresh mozz. (reg. ok too)
chopped tomatoes (I like grape toamtoes halved)
thinly sliced red onion
fresh basil
Balsamic vinagrette (I love good seasons w/ really good oil & vinager.
S&P

Combine tomatoes & onion add S&P, basil & dressing, set aside at room temp.
Dredge cutlets in parm cheese, then egg, then bread crumbs.
Fry them in olive oil until cooked through.
Dice fresh mozz.
Place cutlets over rice, salad or whatever you like.
Mix mozz. w/ tomato mixture & spoon over cutlets.
Serve & pass extra dressing if you wish.
I love this because it is so easy & I leave some cutlets plain that I cut in strips for the kids & I give them the diced tomatoes & cheese plain & on the side also.:goodvibes

You can make schnitzel with the chicken breasts.

Pound them flat, dip them in egg and then bread crumbs, and pan fry a few minutes til crispy. Serve with buttered noodles and gravy (optional).

Super easy and just about everyone likes it!

We're having something like this for dinner, but they are coated in crushed pretzels and have a cheese sauce to go with it. It's one of my family's favorites!
 
Here's an easy hamburger casserole:

Brown 1 lb hamburger and spread in a 13x9 pan. One can of cr of mushroom soup spread over top of hamburger. Drain 1 can of french style green beans and spread over soup. Top with tater tots or tater rounds and bake until bubbly. 350 for approx 35 min.
I usually put some shredded cheddar cheese on top at about the last 10 min of cooking time.
