that wont take me all day to do them.

MIL will be here late tomorrow night. I need some ideas for meals while theyre here.

I have a turkey and a ham for Christmas with mashed potatoes, stuffing and veggies.
Irish stew for Christmas eve.

Aside from that I have breakfast christmas morning. Egg and bacon casserole and egg nog french toast.


Any ideas that I could make while theyre here that are easy but impressive? Am I asking for the moon?
 
I make a Chicken Rotini Toss that everyone loves. It's easy to make (save for cutting up all the chicken) and really yummy.

Here's the recipe, just in case you're interested:

16 ounces rotini pasta
4 skinless, boneless chicken breast halves, cut into bite size pieces
4 tablespoons olive oil
3 cloves garlic, minced
1 1/4 teaspoons salt
1 1/4 teaspoons garlic powder
1 1/4 teaspoons dried basil
1 1/4 teaspoons dried oregano
1 cup chopped sun-dried tomatoes
1/4 cup grated Parmesan cheese

DIRECTIONS
Cook and drain pasta as directed.
While pasta is cooking, in a 5-quart pot, heat olive oil and saute chicken, garlic, salt, garlic powder, basil, and oregano until chicken is cooked. Add sun-dried tomatoes and cook for two minutes.
Remove from heat and toss with pasta. Serve with grated Parmesan cheese if desired.
 
Lasagne? Stuffed shells? I love these meals because I can make them ahead of time and pop them in the oven before the meal. Then do a salad and garlic bread.

Does she like pizza or chinese take out? When people stay at our house for long periods, I always do some sort of meal like this, so we can just enjoy one another's company without having to worry about cooking and cleaning.

How about a lasagna? That usually makes enough for left overs. Or how about just grilling some steaks - thats always a nice treat!

By the way, what is Egg nogg french toast and how do you make it? Sounds yummy!
 
Check out the Disney recipes on allearsnet.com They have some awesome tasting(as in fancy) but very easy recipes to make. Also thecanopenergourmet.com has some VERY EASY recipes to make. Dont let the convient factor fool you---yummy yummy!
 
Yes, yes, please share the egg nog french toast recipe. :goodvibes As far as easy meals, I like to put a pork tenderloin or some chicken breasts in the crockpot with some type of sauce (BBQ is my favorite) let it cook for several hours and it's delish.

Great ideas. I have a confession to make though. I am 35 years old and have NEVER made lasagna :blush: can you believe it? I know I know but I havent done it.


Egg nog french toast.

First you make egg nog bread in the bread maker:



Holiday EggNog Bread for 2lb Bread Machine

3/4 C eggnog
1/3 C water
1 egg
3Tablespoon butter cut up
4 C bread Flour
3Tablespoon sugar
1teaspoon salt
1/2teaspoon ground nutmeg
1&1/2 teaspoon active dry yeast
1/2 C mixed candied fruits and peels ( I skip these no one likes them here)


Add all ingredients according to manufacturer directions Select basic white cycle.


(If you want the bread without the french toast here is an eggnog glaze thats really yummy!
in a small mixing bowl stir together 1 Cup sifted powdered sugar and enough eggnog 1-2 Tablespoons to make a good glaze.)






Then you make the french toast, Make sure you do this the night before so they all soak together.
Baked French Toast

INGREDIENTS:
1 (1 pound) loaf French bread, cut diagonally in 1 inch slices
8 eggs
2 cups milk
1 1/2 cups half-and-half cream
2 teaspoons vanilla extract
1/4 teaspoon ground cinnamon
3/4 cup butter
1 1/3 cups brown sugar
3 tablespoons light corn syrup

DIRECTIONS:
Butter a 9x13 inch baking dish. Arrange the slices of bread in the bottom. In a large bowl, beat together eggs, milk, cream, vanilla and cinnamon. Pour over bread slices, cover, and refrigerate overnight.
The next morning, preheat oven to 350 degrees. In a small saucepan, combine butter, brown sugar and corn syrup; heat until bubbling. Pour over bread and egg mixture.
Bake in preheated oven, uncovered, for 40 minutes

Ooooh a cool twist on Lasagna is Chicken Mushroom Lasagna made with an alfredo sauce instead of marinara. Very verrrry yummy!

I have a pork roast too. I could do that for Boxing day! Great idea.
 
I like to do a two lasagna meal - one with meat, one veggie. Buy the noodles that you don't have to pre-cook. Use canned spaghetti sauce. Make a salad and jazz it up with mandarin oranges or dried cherries. Bread sticks. Good meal.
 
My family loves my braised pork chops in onion soup mix, it can be done on the stovetop, in the oven, or in a slow cooker.
