My son's private school (http://www.lhjna.org/index.html) is having their very first spring carnival on may 19th. they are having a bake sale table and are lacking in donations :( so I would like to help as much as i can, to fill the "table" ;) looking for any inexpensive quick and easy ideas or recipes.. they would be greatly appreciated.

we absolutely love the school, have been there since 2001...my daughter graduated from there in 2005 :) I really hope this carnival will be a huge success :) because the school is so small, it would be a great annual fundraiser for the future :)

You can cut rice crispie treats into squares, put them on a popsicle stick and dip in chocolate and sprinkles. Same goes for marshmallows. This is a good way to make a few treats look like a lot and make them a little fancier.

Here is a recipe out the the Cheerios cookbook I just got

Roly Poly Peanut Butter-Chocolate Balls
Makes 24
1 cup milk chocolate chips
2 Tbsp. water
1 cup creamy or crunchy peanut butter
1/2 cup powdered sugar
1/2 cup light corn syrup
2 cups Cheerios

1. Line cookie sheet with waxed paper
2. Place chocolate and water in 1 qt. saucepan. Heat over medium heat, stirring constantly, until the mixture is smooth. Cool the chocolate while preparing the candies.
3. Place PB, Pow. Sug, and corn syrup in med. bowl. Stir until well blended. Stir in the cereal until evenly coated.
4. Lightly spray hands with cooking spray. Roll 1 Tbsp. of mixture into ball and place on cookie sheet. Press lightly so that bottoms flatten out.
5. Spoon 1 tsp. of chocolate onto each ball. Refrigerate till firm.

* I shortened some of the directions because I am running short on time, but if you have any questions about them send me a PM. I would put these on a stick too (maybe even a pretzel stick) since kids love stuff on sticks and be sure to label that they have peanut butter in them for those with allergies.
 
These are always a big hit at my picnics. Mix up a box of brownie mix (per the directions) and fill a mini muffin pan with the batter, maybe 1/2 way full. The stick a Rolo on top of the brownie mix and push down a bit, bake for about 10 minutes!!! Easy peasy.
 
dip them in melted chocolate... white or plain..
before they dry.. sprinkle with candy sprinkles,colored sugar, M&Ms or
any tasty treat that is small.
wrap and present them... anyway u like
I usually hit the dollar store... for wrapping goodie bags
you can it do it all for as little as 10.00.
Great thing about this ... kids can do it.. and love to help!!

you are like me. I love my dd's school and it is small.

We usually have a hard time getting people to bake. there are about 5 of us who really do it.
here is my tip its all about the markiting. use baskets for cup cakes and sell as a whole.
give out flyers about the school.

Here are a few that I snipped for my own notes from the thread: (Where ever it says "I", it was actually one of the original posters telling their experiences - not me.)

White Chocolate Popcorn
One bag microwave popcorn
1/2 of pkg almond bark

Cook popcorn and make sure you remove all the uncooked kernels. Melt white almond bark in large bowl (I do this in 45 second intervals so as to not scorch)

Dump bag of popcorn into bowl of melted almond bark and stir until the popcorn is covered. Pour over wax paper to harden and then break apart and put into clear gift bags with beautiful ribbon.

Variations: Someone else melted a huge Symphony Bar with the toffee in it and drizzled it on top of the popcorn once it was spread out on wax paper ~ OMG!!! It is to die for and looks totally beautiful! I put it in clear cellophane bags and tied them with a cranberry colored organza ribbon with gold trim ~ I would actually pay good money for these if I saw them in the store!!! And soooo easy and inexpensive too!

Another mixed the popcorn with rice chex, nuts and chocolate chips. I poured the white chocolate over it and mixed it and spread it on the wax paper and cooled it. Then I drizzled dark chocolate over the top of one batch and caramel over another.

S'mores Marshmallows
Large marshmallows
chocolate almond bark
crushed graham crackers

Melt almond bark and dip marshmallow (using a toothpick) until completely coated. Roll in graham crackers and let harden on wax paper. They're yummy!


Oreo Truffles
1 package Oreo cookies
1 8oz package cream cheese (room temperature)
Melted chocolate for dipping

1. Chop Oreos in a food processor until nothing but crumbs remain. Put crumbs in a large bowl. Using mixer, mix thoroughly with cream cheese until doughlike. (There should be no white traces of cream cheese.)
Roll into balls about 1 inch in diameter and chill for 1 hr.
2. After chilling, dip the Oreo balls in melted chocolate and let dry on waxed paper. An optional decoration would be to drizzle white chocolate across the top or dip the Oreo balls in white chocolate and drizzle with dark chocolate. Makes about 40.


Coconut Macaroons
1 lb coconut
1 can sweetened condensed milk
2 teaspoons vanilla

Mix together, drop by teaspoon on greased cookie sheet
Bake 350 for 12 minutes
Yield: 4 dz small or 2 dz large



Fudges:

The Easiest and Best Fudge ever!!
I make this every year- I have fun changing the recipe around.

1 container of chocolate frosting
1 12 ox bag of semi sweet chocolate chips
3 snickers bars, chopped

Melt choc chips (stovetop or microwave)- remove from heat. Stir in frosting.

At this point you can either: mix in chopped candy bar or put the mixture into a pan and sprinkle with candy bars. I prefer to mix it in-

Add to a 9" square pan- refrigerate until cooled. Remove from pan and cut into squares. Tips: Line the pan with alum foil for easy removal. Add any kind of candy bar you like...change the chips- last time I used peanut butter chips...yum!

I like this recipe because you do not need to refrigerate (only to cool) it like many fudge recipes. Enjoy!!


Microwave fudge. It's so easy and really great tasting.
1 12oz pkg (=2 cups) chocolate chips
1 14oz can sweetened condensed milk (NOT evaporated milk)
1 tsp vanilla extract

Combine the morsels and condensed milk in microwave dish (I use a large glass measuring cup). Microwave on high 3 minutes. Stir until mixture is smooth. Stir in vanilla and any additions. I like mine with nuts but always make half without nuts for other family members. Spread mixture evenly into a lined or greased 8X8 (9X9) pan and chill until firm. I line my square pan with foil so I can lift the entire thing out when set up. It makes it easier to cut.

For Rocky Road fudge just add 1 C mini marshmallows and 1/2 C chopped nuts. For Black Forest Fudge add chopped red candied cherries, mini marshmallows, and chopped almonds. You can experiment with different mixtures depending on your family's favorites. Very velvety texture.

Make a Double Decker fudge by chilling the chocolate fudge then adding a layer made the same way, but with Reese's peanut butter chips. YUM!



World's Easiest Peanut Butter Fudge
1 regular size container white cake frosting
1 regular (short) size jar of peanut butter

Spoon contents of each container into a microwave safe large bowl. Microwave in 30 second increments until the mixture can be thoroughly mixed (it takes 2 - 30 second increments in my microwave) After mixing completely pour into a Pam sprayed glass 9X9-inch pan. Will harden completely in the refrigerator.

This is VERY good, and I was skeptical.....
Experiment with mixing peanut butter with chocolate icing, adding walnuts and other goodies to the mix.



Peanut Butter/Chocolate Cookies (tastes like Reese's)
1-Cup Peanut Butter
1-Cup Sugar
1-Egg
Yes, that is all you need for the cookies.

Mix together and form into balls. Use a fork dipped in sugar to flatten the cookies (criss-cross). Cook at 350 for 8-10 minutes. When you take them out of the oven, place a Hershey's Chocolate Kiss in the center of each cookie. Let the cookies cool totally before removing them from the cookie sheet, they are a bit fragile. If you let them cool before you pick them up they do hold their shape. There are very good!


Chocolate & Peanut Butter tarts:
This has become my signature at parties. Make a few dozen.
Make your favorite peanut butter cookie recipe (or use the refrigerated kind if you need super easy!)or you can use pre-made sugar cookie dough and add 1 cup peanut butter. Roll dough into 1 inch balls. Place in greased miniature muffin tins. Press dough evenly on the bottom and up the sides of each cup.

Take a cap from a water bottle to make an indentation in the center. It works great, just the right size. And to avoid the cookie dough sticking to whatever your pressing with dip it in flour after every couple of uses. Place a mini peanut butter cup in each muffin cup and press down gently.
OR: Don't even make an indentation, we use mini muffin cups lined with candy papers, then as soon as they come out of the oven, we just push the peanut butter cup right into the hot cookie.


Bake at 350 for 10-12 minutes or until set. After removing them from the oven, Cool completely--I like to give them a jumpstart by putting them in the fridge for 10 minutes.

Variations: Use a Rollo candy instead of a peanut butter cup for a caramel center. Or, instead of pushing a peanut butter cup into it wait until the cookies cool and pipe in chocolate frosting so it kind of looks like a Hershey's kiss. They are really good and easier than unwrapping candy if you want to make a bunch.

One of the girls on my cruise thread made chocolate dipped Oreo's on a stick for easter.

She used the double stuffed kind....

ooohhh and if you used the mint or peanut butter oreos ....YUMMMMY..

You can do this with the sugar cookie roll dough too. Slice it into 1 inch slices and quarter each one. Press each quarter into a mini-muffin and put the Rolo in the middle. Bake as directed.
 
Here's my easiest recipe and it works out great for bake sales because you can easily double or triple the recipe.
Mix 1/2 cup butter, 1/2 cup milk, 2 cups sugar and 6 tablespoons of cocoa powder in a large saucepan. Stirring over med heat bring to a boil. Remove from heat and add 1 tablespoon vanilla. Add three cups quick oats and 1 1/4 cup coconut. Mix well. Quickly spoon out cookie size drops onto a sheet of wax paper. Let cool.
 
My daughter's school has a cake walk and bake sale every year. Lots of parents bring rice crispies treats, cupcakes and chocolate chip cookies. Way too many of them. An actual cake is a rarity and as such is always a huge hit. They always go first. The cake doesn't have to be fancy - I usually just use a mix and canned frosting. I make layer cakes instead of sheet cakes since they seem to appeal to adults more. I can usually crank out 3 or 4 of them the evening before the sale.
 
I dont know exactly how they are made but we always buy a couple of ice creamcone cakes when we are at bake sales. They have m&m's in the bottom of the cone with cupcake on the top. Covered in frosting with sprinkles.

You can make them like this...

Large cardboard box lined with aluminum foil.
1 box of 24 flat bottomed ice cream cones (aka cake cones)
1 commercial cake mix and frosting 24 aluminum foil strips 4 inches high cut long enough to wrap around the cones.
Real 3M Scotch tape (others may not stand the heat)

Prepare cake mix following directions for cupcakes. Fold the foil strips in half and line the outside of the cupcakes with them-taping the ends together. Fill the cones to the top and place in your deepest cake pan. Bake according to cupcake directions; after you remove them from the oven, cool 5 min. and remove the foil collars. The batter will have risen and formed a shape that looks just like a real scoop of ice cream. Allow cones to finish cooling and frost as usual. Store/transport in cardboard box.
Note: If you are in a hurry, you can skip the foil collars and make flattops, filling them only to the point they widen but they are not as cute.

Anything with M&M's on top will sell.
Regular cupcakes will go like crazy if you are just creative with the toppings.
(try gummy anything, M&M's, various sprinkles, sugars in school colors, etc.)

You can also put the rice krispie treat mix when it's still warm into ice cream cones, too! They always look cute!
 
Sam's has Hershey's brownies that has 5 kits inside for about $4. Made them last night and they were the best I have ever made...and quick.

Got it myself for graduation reception and family day for Taekwondo.

I made these for Thanksgiving last year and my family made me swear to bring them to every gathering from here to eternity. :lmao: They're really good and absolutely beautiful if you drizzle the contrasting chocolate over them! (I used low fat cream cheese and reduced fat oreos and you couldn't tell at all)
 
I make a brownie mix according to the directions. Put cupcake liners in a muffin pan and fill with the brownie mix about 1/2 full. Cook according to directions. A couple of minutes before they are done stick an unwrapped mini reeses peanut butter cup in the middle of each brownie and press down til it is the same height as the rest of the brownie.
