Need help with brunch ideas please!

I'm having a small brunch on Saturday and one of the guests does not eat meat. She does eat eggs and seafood although the children don't eat seafood:confused:

Would you all please help me plan a menu? Two or three items, plus fruit and maybe a light desert?

I have NO imagination, LOL.

Brunch and breakfast menus are always hard for me because I am allergic to eggs! I would suggest fruit dishes and one egg dish and one meat dish.
 
There is a recipe somewhere on the internet...but I dont know where exactly. it's a french toast that you prepare the night before and put in the fridge. it's a one pan deal with peaches in it. Just layer the stuff in a dish, let soak over night and bake. i'll see if I can find it for you.

How about a hash brown casserole. There are different recipes which can include meat or not. My DH loves potatoe dishes and always starts a brunch with potatoes. I'm not much of a cook so I can't help in the recipe department but maybe you can do a search and find something suitable to your liking. I'd love the fruit - any kind. And, fresh bread or maybe croissants.
 
Also quiche works.

French toast as Amid suggested. (I have a recipe if she can't find hers....)

Fresh fruit salad.
 
This is similar to the one I saw.
Peach French toast
1 cup brown sugar
1/2 cup butter
2 Tbl. water
1 (29) can sliced peaches
5 eggs
1-1/2 cups milk
1 Tbl. vanilla
1 loaf french bread (cut into 12 to 14 slices)

Drain peaches and reserve syrup. Set aside. In a saucepan, heat sugar and butter on medium low heat until butter is melted. Add water and continue cooking until sauce becomes thick and foamy. Place peaches on top of cooled sauce and cover slices of bread placed close together. Blend together eggs, milk and vanilla until well mixed. Pour over bread, cover pan and refrigerate overnight.
To bake, place in a 350 degree oven for 40 minutes Loosely cover with foil for the last 10 to 15 minutes if mixture is browning too quickly. Serve with warmed reserved peach syrup. Serves 12 to 14.

I have a recipe for a Cheese Blintz Souffle. It's like a casserole dish with batter, then a layer of blintz filling then more batter. It's very good and not too difficult. Let me know if that interests you.

I also bought a book yesterday that has a bunch of knock-off recipes from restaurants........not sure if you've had them but if you want I have a knock-off recipe for Cracker Barrel's Hashbrown Casserole.

There's also quiche?!

With maybe some roasted potatos on the side?

Juices, muffins, danish, etc?

Oh and I hve a ton of french toast recipes if anyone wants them.

I could eat quiche every day! When my SIL was up over the holidays, I served her that. I think I'll try something different, but thanks for the suggestion!

Someone posted this over of the recipe board a couple of years ago, and my family loves it!

Blueberry French Toast Cobbler

1 loaf french bread or challah (I use challah)
6 eggs
3/4 cup milk
1/4 tsp. (heaping) baking powder
1-1/2 tsp. vanilla
4-1/2 cups blueberries (fresh or frozen)
1/2 cup sugar
1 tsp. cinnamon
1 tsp. cornstarch
2 Tbsp. butter, melted
powdered sugar

Slice bread about 3/4" thick. Place bread on a rimmed 10-1/2"x15-1/2"x1" baking sheet.
In medium bowl, whisk together eggs, milk, vanilla and baking powder. Slowly pour over bread, turning slices to coat completely. Cover with plastic wrap and let stand at room temp. 1-2 hours or refrigerate overnight.
Preheat oven to 350º. Butter 13"x9" baking dish. Place blueberries, sugar, cinnamon and cornstarch in dish. Stir to coat berries, spreading to cover bottom of dish evenly. Place bread slices, wettest side up, on top of berry mixture, wedging slices to fit, and cutting some to fit if neccesary. You may not use all of bread. Brush top of bread slices with melted butter. Bake in centre of oven 20-25 minutes or until toast is golden and berries are bubbling. Let stand 5 minutes before serving. To serve, lift toast onto plate, spooning berry sauce over top. Sprinkle with powdered sugar.
 
Hare's a suggestion....I've gotten good results with this...
You could also customize it...replace the "meat" item with say crumbled Harvest Burger (all veggie) or similar all veggie breakfast sausage...also....I'd use egg beaters instead of whole egg...with lite mexican cheese....I've found that this is good with a little of Emeril's red sauce on top!

Goofy Breakfast Casserole

Ingredients
3 to 4 medium Red Bliss potatoes (scrubbed, skins on, and baked in microwave)
1/4 to 1 pound turkey ham cut into cubed or crumbled sausage or bacon (optional)
1/4 cup chopped scallions
1/2 cup red or green pepper, chopped
1/2 to 1 cup light sour cream
1 to 2 cups four shredded Mexican cheeses
10 to 12 eggs, beaten
Tomato wedges

Grease a large Corning pan (10-1/2 x 12-1/2 inches). Allow potatoes to cool, then slice 1/4 inch thick, discarding ends. Layer in bottom of pan to form crust. Layer on meat, then scallions and bell pepper. Drop spoonfuls of sour cream and spread out with knife. Sprinkle on shredded cheese. Pour beaten eggs over all. Bake uncovered at 350 degrees for 30 to 40 minutes until knife comes out clean. Serve garnished with parsley (and tomato wedges).
 
I don't have any recipes to offer but if you surf the web, I'm sure you can find something but a neighbor of mine had a First Communion Party for her son right after the 9am ceremony. She did a brunch party & she made a couple different breakfast casseroles (look for recipes on-line), and that cheesy potato casserole & she served fruit salad & those wonderful huge muffins from Sam's Club & had fresh bagels (with butter, cream cheese(s) & assorted jams out) & then she served the cake. Beverages was coffee, OJ & also OJ mixed with Champagne. It was nice & fairly simple.

She told me she did the breakfast casseroles because she was able to make them earlier & then re-heat as guests started arriving. She really got to enjoy her party too so it seemed to be a great idea.
