Need help planning Christmas Eve menu PLEASE!!

Hi to all

Having about 20 people over on Christmas Eve for dinner. Last year I had ribs for dinner and they were a HUGE HIT!! Actually have been requested again for this year. There is an out of this world rib place in Chicago. My husband will get just the ribs and maybe some sliced bbq pork tenderloin. We will make the sides at home. Last year I made baked potatoes, salad and rolls.

Looking for other suggestions for sides keeping in mind that I have one oven which I need right before to keep the ribs warm. Do have a microwave and crock pot.

Any ideas for sides for 20 people?

My family loves baked beans and cole slaw with ribs. You could make the beans ahead of time and heat in your crockpot. We always have corn bread, too.

I'm from the Midwest also...would love to know where these "out of this world ribs" are. I think I have a clue, but if you care to share, please do. If you can't put it in this message, please pm me. Thanks! :wave:
 

I was watching Alton Brown on Food Network recently when he was featuring sweet potatoes. One of the recipes was for Chipolte Smashed Sweet Potatoes.

2 large sweet potatoes, peeled and cubed
2 T butter
1 whole canned chipotle peppers in adobo sauce, chopped
1 tsp adobo sauce from can of peppers
1/2 tsp salt

Steam cubed potatoes in steamer basket for 20 minutes until potatoes are fork tender. Add butter to potatoes and mash with potato masher. Add peppers, sauce and salt continue to mash to combaine. Serve immediatley.

Now I would have made a mess if I hadn't seen the show because you take only ONE pepper out of the can and chop it NOT the whole can unless you have a mouth of steel! And I minced them instead of chopping!

The potatoes did not taste hot just mild and the smokey flavor of the pepper was a wonderful combination for the taters! These are sooooo good!
 
The ribs come from a place called Smokin Woody's on the north side of Chicago. You have not had ribs until you try theirs...........YUMMMMMMMMMMY
 
This is a great recipe. Of course you would need to multiply it to serve 20. I would say it serves 6, even though I could eat the whole thing by myself. :rolleyes:

Corn Pudding

1/2 cup chopped bacon
2 tablespoons butter
1 cup finely chopped onion
2 cups corn (I try to find baby white or other tender variety)
1 1/2 teaspoons salt
1/4 teaspoon cayenne pepper
6 eggs
2 cups heavy cream
1 cup milk
1/4 teaspoon fresh ground pepper
1/2 cup grated Parmesan
1/2 cup yellow cornmeal

Preheat oven to 375° and grease a 6 cup casserole dish.

Saute chopped bacon slowly and cook until it's crispy. Remove bacon bits from pan and set aside. Add the butter to the bacon fat and saute the onions until translucent. Mix in the corn kernels, salt and cayenne pepper and remove from heat.

In a large bowl, whisk the eggs well. Add the cream and milk and whisk until well combined. Add the pepper, Parmesan, and cornmeal and whisk until smooth. Stir in the bacon bits, onion and corn mixture and pour into the greased casserole dish. Bake at 375° for 1 hour. Serve hot.
