Need Easy Cookie Recipes (probably drop cookies)

Our Cub Scout den is having a big bike rodeo and picnic this weekend and I said I'd bring cookies. DS says he's getting tired of chocolate chip and he wasn't thrilled when I suggested oatmeal raisin. I can't think of anything else. Does anyone have a good, fast and easy cookie recipe?
 
I just printed off the thread "Cookies from Cake Mixes". There's so many good ideas. I think you'll find something to work out of those recipes.
 
a regular sugar cookie and put a herseys kiss in the middle of it....always goes over big with the kids...
 
At about that age, DS's favorite cookie was "Monster Cookie" - although I never made them that big. I cut the recipe down & make them melon baller size instead of ice cream scoop size.

Monster Cookies - ¼ recipe
3 eggs
½ lb brown sugar
1 c sugar
¾ tsp vanilla
¾ tsp maple syrup
2 tsp baking soda
¼ lb butter
12 oz peanut butter
4½ c oatmeal
¼ lb chocolate chips
¼ lb M&M’s
Mix in order given. Drop by melon baller scoops & flatten. Bake for 12 min. Do not overbake. Let cool on sheet a couple of min before removing!! Very important! Yield: 10 dozen.

His other favorite was Reese’s Peanut Butter Cup Cookies, but that more work than just making PB cookies with a Hershey's kiss - same basic taste.

Peanut Butter Cookies Sealed with a Kiss

2/3 c smooth peanut butter
¼ c unsalted butter, softened
1 c packed brown sugar
2 large eggs
2 tsp vanilla extract
1½ c all-purpose flour
¼ tsp salt
Sugar (for coating cookies)
40 Hershey's Kisses

1. Preheat the oven to 350 degrees. In a large bowl, beat the peanut butter, butter and brown sugar on medium speed until combined. Beat in the eggs one at a time, then add the vanilla extract. On low speed, blend in the flour and salt.
2. Shape the dough into 1-inch balls. Roll in the sugar to coat lightly. Place on ungreased baking sheets, about 2 inches apart. Bake for 12 to 15 minutes or until lightly browned.
3. Move the cookies from the baking sheets to a wire rack and immediately place an unwrapped Hershey's Kiss on the center of each cookie, pressing down so that the cookie cracks a little bit around the edge.
4. Using a metal spatula, transfer the cookies to wire racks and let them cool completely. Repeat until all the dough is used or all the Kisses are gone. Makes approximately 40 cookies.
 

I have now seen "unwrapped" Hershey kisses in a bag at the store. The hardest part about those cookies with the kiss in the middle was unwrapping them all. I have seen mini ones by the chocolate chips but have also seen regular ones on the candy aisle. I think I saw them at Albertson's.
 
Why not brownies? They are always a favorite.
 
Thanks for all the ideas. I told DS about the Monster Cookies and he said they sound good, except he doesn't want oatmeal in them. LOL :confused3 So I guess I'll be making chocolate chip cookies with M&Ms instead of the chips.
 
I have a super EASY 7 layer bar recipe...My girls love it....and it's REAL EASY.

7 layer bar.

(32 bars...13x9" pan)

Preheat oven to 350 for shiny metal of insulated pan or 325 for glass, dark or non stick.

Melt 1 stick of butter (or 1/2 cup margarine) in the pan in the oven...while oven pre-heats

Remove pan carefully from oven oand place on heatproof sufrace-Pan and butter will be HOT

Cut the corner off 1 pack gram craker crumbs and spread evenly over melted butter.

Pour 1 can Sweetenend Condensed Milk evenly over crumbs to wihtin 1 inch of sides of pan.

Sprinkle top with your choice of toppings.
I use Chocolate Chips, Butterscotch chips, Dark chocolate chips, toffee chips, Peanut butter chips, coconut flakes, and mini marshmellows. Press topping firmly with back of fork.

Bake 22-27 min or until gloden brown. Cool completely


I'm not a nut person...but the recipe calls for walnuts or other nuts of your choice.

For 64 bars in a 16 1/2 x 11 1/2 sheet pan...make as above except melt 2 sticks of butter or margarine...in microwave bowl (NOT in pan) and carefully pour into pan to cover bottom. Use 2 packages of gram cracker crumbs, 2 cans of Sweetened condensed milk and additional toppings.

I use regular gram crackers that I smash and make into fine crumbs...but I think you can purchase gram cracker crumbs. Crumbing them is the only thing that take any time at all.
 
If your son doesn't like oatmeal at all, then he probably won't like this recipe, but this is the easiest cookie recipe I've ever seen. It is a no-bake cookie recipe that my ds's have been making since they were about 7 years old, they are now 14 and 11. (They are supervised on the stove part). The best part about this recipe (besides its simplicity) is that I've always got all the ingredients on hand. All the cookies are done in probably 1/2 an hour from start to finish. :flower:

Chocolate No Bake Cookies

3 tbs cocoa
2 cups sugar
1/2 cup milk
1/2 cup butter
3 cups oatmeal
1/2 cup peanut butter (creamy OR chunky)
1 tbs vanilla
In a large bowl, Mix together the oatmeal, peanut butter and vanilla. Set aside. Heat the cocoa, sugar, milk and butter in a saucepan over medium heat. Heat these together very slowly until mixture comes to a boil, stirring contstantly. Boil no longer than 90 - 120 seconds. (If you heat it too long your cookies will be too crumbly.) Pour hot cocoa mixture over oatmeal mixture in bowl. Mix well. Drop by heaping tablespoons onto waxed paper. Let cool until firm.
