Need cooking help---fried chicken oil ???

Hi All,

I would like to make fried chicken tomorrow in my new electric skillet.

I have the chicken marinating in buttermilk and a little hot sauce right now and will dredge it in flour, paprika, garlic powder, pepper tomorrow before I fry it.

My question is, can you reuse the oil that you cook the chicken in? Maybe filter it into something for future use?? How would you store it if that is an option?

I am just wondering what to do with all of the left over oil, since it seems like there will be alot of it.

P.S. if you have a good recipe for fried chicken, I would love to see it.

I'm interested to find out, too. I guess you can re-use it about 5 times, but we just don't eat fried food that often and wondered if refrigeration would preserve it longer.

Note: DON'T use all the House Seasoning listed in the recipe! It's meant to make a batch, and you eyeball sprinkling part of it. We tend to do our own seasoning (salt, pepper, garlic powder, paprika, Old Bay)

When I do fry, I tend to strain it through a coffee filter when it's cool and use it again within a few days - either for chicken again, or I did the "Traditional Indiana Breaded (Pork) Tenderloin" from allrecipes.com a few weeks back that didn't seem to affect the flavor.

Hoping to hear from other folks.
 
I have to say that I do not like the taste of chicken fried in oil. Frying chicken is the one time I rely on Crisco.

Not sure if there is a real reason, or if that is just the way my grandma and mom made it.

I have never used a recipe. I just dredge it in the seasoned flour, melt the Crisco to about 1/2 the depth of the pan, and put the chicken in. Cook for about 20 min per side.

As a child, we always kept oil in the Fry Daddy. You don't need to toss it out until it becomes rancid, but do have to remember that every time you cook with a batch of oil, it is breaking down just a little bit more so the smoke point is a little lower. However, there were different kinds of oil - the actual oil itself was always canola, but it depends on what you've cooked in the oil before as to what you can cook next. So if you use the oil to cook fish, you won't want to use it to fry doughnuts - unless you like fishy flavored donuts.

I remember there was a trick that was supposed to "de-season" the oil, but it didn't work all that well. I think you put a whole chopped up onion in the oil when it was hot and took it out when the onion cooked thru, maybe? I know it didn't work for me!

I know some people swore they could completely filter their cooking oil by letting it sit for a day or two and then running it through cheese cloth a couple of times, but personally, I still wouldn't use oil I'd used to cook something with a smell to make pastries or such. Just me.

And of course, I haven't used a fry daddy in about 15 years. I did get 3 of them for my wedding, but I've drifted away from eating that way.
 
It is e exceedingly rare occasion that I fry anything, either.

I save applesauce jars to put the grease/oil in. Then I throw the jars out.

I don't like it going down the pipes.
