Need an appetizer......

Having dinner at a friend's house this weekend. I will bring an appetizer. Sounds easy right? Not! here are the requirements....
One vegetarian(but will eat seafood)
One no butter or cheese
One major Carnivor
One low carb
Ok so I can't make my usuals-(artichoke dip, bruschetta, quesadillas layer dip....)
I was going to make some tortilla rollups? But any other ideas? This is a no frills crowd! nothing fancy. any favorites that you can share?
 
Sounds like you'll be bringing a salad, and the carnivore will have to get the meat at the maincourse!

Had a good one (easy too) until I saw the "no cheese". I'll give it to you anyways...

Greek Dip

Spread 8 oz of cream cheese in the bottom of a container.

On top of that put
a finely chopped cucumber (I like to take the seeds out)
a finely chopped tomatoe
a bunch of finely chopped green onion
Crumble Feta cheese on top
Serve with pita chips.

It really is very good!

I have a recipe for a broiled shrimp appetizer that's easy to make and meets all those needs.

Here it is on the Internet.

I actually highly recommend this cookbook (Cooking With the Firehouse Chef)--it's fabulous and tasty, not overly gourmet, but not overly "home-cookin'" either. A lot of it is twists on comfort food. Most of the recipes are fairly healthy, too.

A good quick shrimp recipe, like shrimp cocktail, is to take a block of cream cheese and put it on a serving platter...cover the cheese with cooked shrimp or crabmeat (bite size pieces) and then pour cocktail sauce over the top...serve with crackers.

How about a chili cheese dip that goes in the microwave?
 
I don't know that the vegetarian would appreciate the shrimp (hey, I know Hindus wouldn't go for it!), so may I suggest Hummus with pita chips? With a side of cut up veggies for the low carbie? It's "ethnic" enough to be elegant for most parties, while essentially boiling down to chip and dip for most meat eaters with simple tastes (like my hubby, who is allergic to milk!). The hummus also has no butter or cheese (but make sure you read the label so you don't accidentally pick up the "parmesan" one.)

You can buy the hummus ready made at grocery stores in different flavors.

Hope that helps! Your party sounds like any of my family's get-togethers... or any of my work parties nowadays!

BLECH! Find a different crowd and bring chili cheese dip!

Kidding.... just kidding! I can't make any suggestions because none of the people you described would eat anything I have ever served in my house!

How about an antipasto platter? Make a tray of mozzarella and parmesan cheese, salami, roasted veggies (like red peppers), olives, giariniera mix... throw in a tray of sliced baguettes and then everyone can nibble on what fits their own dietary needs.

(can I say that I LOVE Feta and that one is going on the platter! the non- cheeser can eat something else-like the shrimp...and I love the idea of cutting up some italian meats for the carni!
Really you know I must love these guys to cater to their every little whim! But we all get together about once a month- and they are the only people that invite us and all our kids(*4 of them!)to eat so I think I'll keep them!

What about home made salsa? Its healthy and I am sure that there are some kind of chip for the low carb person. And the good thing is you can make it ahead of time and the flavors will only get better.

The other idea I had was devilled eggs, when I bring those they dissappear. People only think of them for picnics, its a nice change in the winter.

Giardiniera is pickled vegetables.. like cauliflower, carrot slices, red peppers, and pereroncinis. You can find jars of it in the pickle section of your grocery store.

I love Feta, too. I made pasta last night with fresh tomatoes and feta and onions and olive oil and garlic... it was SO good.
 
I always do a pinwheels tray. You buy flatout flatbread in different flavors (or just plain tortillas if you can't find flatbread). Load it with your stuff - some with cheese spreads, some with meat, some just veggies. Roll em up and cut them in one inch strips. They look great and offer a huge variety.
I've done them with cream cheese and meat, salsa and refried beans, lettuce and tomatoes. Anything works! Best part - they are so easy, and there's almost no prep time to it!!!

That sounds like a good idea! Maybe you could do some lettuce wraps for the low-carb eater, too.
