Need a taco dip recipe

We're having a potluck at work Friday and I offered to bring a taco dip, even though I've never made it. :laughing:

Can you share your tried and true recipe? Also, I'm kind of hoping for one that you can heat in a small microwave, but it doesn't have to be warm. Oh, and my coworkers want it with "the works."
 
1 big can of refried beans
1 lb of ground beef/ground turkey
1 package taco seasoning
1 16oz container of sour cream
lettuce
shredded cheese
1-2 diced up tomatoes
1/2 - 1 onion diced
2 small cans of sliced black olives

-Brown ground beef/turkey; Drain, add water and taco seasoning and let simmer for 15-20 minutes
-Spread the refried beans in the bottom of an 11.5" casserole dish
-Add taco meat and let cool
-Once cool, layer: sour cream, lettuce, tomatoes, onions, cheese, black olives
-Refrigerate until needed :thumbsup2

I always serve it cold with tortilla chips and salsa, and everyone seems to love it. I also usually only put onions on one half, as there seems to be a lot of people (like me!) that don't like onions.
 
Mine is a simplified version and served cold:

Mix 1 8oz. package softened creme cheese and 8 oz. sour creme with 1 package taco seasoning mix. Spread in bottom of 8x11 pan. Spread with 1/2 jar Salsa. Cover with chopped,shredded lettuce and 4 oz. of shredded Cheddar cheese. Serve with Nacho cheese Doritos.

I used to add diced tomatoes but now just use chunky salsa. You can make this "healthier" by using fat-free creme cheese and sour creme as well as low salt taco seasoning - doesn't affect the yummy taste at all. This is requested of me for all family parties.
 
Here's the one I use:
1st layer:
2 cans of bean dip (the stuff in the chip aisle)
2nd layer: mix a packet of taco seasoning,1 cup of sour cream and 1/2 cup of mayo
3rd layer: sprinkle black olives, tomatoes and green onions
4th: taco cheese

It's sooo good!

Ours is similiar. I sometimes omit the diced tomatoes all together. For cheese we use the finely shredded in the bag.

We serve with regular nacho chips.

I do the same one. It always goes over huge. I have an aunt who jokes and asks why she makes Christmas dinner--we'd all much rather eat the taco dip. I now pico de gallo instead of the jarred salsa.
 
Here is our new favorite:

2 Cans of Shoe Peg Corn or white corn
1 Can of Rotele Chopped Tomatoes w/green chilies
1 stick of butter
1 block of cream cheese
cumin


Sauté corn in butter for a couple of minutes and add tomatoes, then turn heat down to melt the cream cheese....when melted add cumin. I do not have an amount of cumin to use.....just to taste. It's a good bit of cumin...maybe 2 tbls at least. Keep trying it until you like the taste!! Serve warm/hot!

I use the Lime Tostado chips for a little snaz!

I make something like this, but without the meat. You mix the taco seasoning into the sourcream, then layer refried beans, guacamole, taco dip, cheese, chopped tomatos on top. (You can add olives :scared: if you must.)

OR

melt a little butter in a pot, stir in a little flour, add in a can of Rotel, then chunk up some velveeta and melt.

OR

in a casserole, spread out a brick of cream cheese. Over that spread a can of Hormel chili without beans. Top with shredded cheddar cheese. Heat and eat!
 
Ours goes over big (even tho I never liked the look). Here goes....

1-8 oz cream cheese (softened)
4 oz of small curd cottage cheese
1 package of taco seasoning

Mix together and spread on a plate/platter. I always double this and that makes a large platter (think Turkey plate) size.

Top mixture with shredded lettuce, diced tomatoes, chilies, black olives, bell peppers, taco cheese, jalepaneos. Serve with nacho chips.

I make this right before serving because the lettuce/tomatoes will be watery and corrupt the cream cheese spread. I mix my spread and transport in a container. I cut up all my veggies and put them in ziplocs. Takes two minutes to put together. Great for the vegetarians too. I have friends that actually serve it for dinner. :confused3
 
I actually make mine just like I would make a taco. Beef cooked with the taco seasoning as the packet says and put it in the bottom of a 9 x 13 pan. Top with a layer of cheese, sour cream, salsa, lettuce and tomato. Serve with tortilla chips.
