need a make ahead breakfast casserole

Need one I can make today and serve tomorrow that will stay good if I have to keep warm a long time....

here is one

broccoli ham strata

Ingredients:
12 slices of bread, crusts removed
1 cup chopped ham
One 8-ounce package chopped broccoli
1 cup shredded cheddar cheese
2 cups milk
6 medium eggs
1 teaspoon minced onion
Grease a 9 x 13-inch casserole dish. Layer 6 slices of bread in the bottom of the dish. Top with a layer of ham, broccoli, and cheese. Cover with another layer of 6 slices of bread. In a mixing bowl, combine the milk, eggs, and onion to make a sauce and pour evenly over casserole layers. Cover with plastic wrap and refrigerate overnight. Bake in a 350-degree oven for 1 hour.

Serves: 8

not a casserol per say- but easy to do advance prep time on.

go to the local pizza parlor (best are those "take and make" places) and get a plain pizza crust-put it in the fridge.

make ahead:scambled eggs, bacon/sausage or ham (and dice it up in small peices), a pot of country gravy (envelope mix works fine), shredded cheese.

when ready to cook just pile everything on pizza style (gravy for the sauce, eggs, meats, cheese-some even put sauteed onion and green pepper). bake for about 20 minutes.

breakfast pizza has been a huge hit at office brunch pot lucks.

I am on call tomorrow, but the kids will be here around noon. If I get called out I need something that can stay in the oven for awhile and not be totally ruined.

I always fix the ham strata christmas eve so that I get to enjoy the kids the next morning without getting stuck in the kitchen. I have modified the bread on the top layer I use christmas cookie cutters in the center of the slice makes the top look festive.
