Need a low-carb italian main dish to take to a pot-luck

college student pot luck we bring food, they don't so I should feed 8-10. Usually italian is a low-cost thing. But we're eating lower carb and I need to make sure there is SOMETHING we can eat there.

Any suggestions for a low-carb italian themed entree?

Include a recipe if you have a favorite. :)
 
I did Google some and checked out the links you posted. Many of the recipes would be fine for 2 to 4 , but not feasible for feeding that many.

Just thought some DISers on the budget board might have a recipe or two.:goodvibes
 
meatballs and sauce. italian is usually pasta based. i usually do polish sausage and meatballs in BBQ sauce for potluck events. My local grocery store (price chopper) always runs polish sausage and frozen meatballs on sale BOG2 free and i always do that deal a couple times when they run it so this is usually something i have the meat on hand for. for the sauce i do whatever bbq sauce is cheapest or i already have on stock (depending on the time of year) and add brown sugar and vinegar to it to so it dosn't thicken up in the crock pot.
 

Well, I have had chicken marsala and chicken cacciatore (sp?) in Italian restaurants before and it wouldn't HAVE to be served with a carb.

No recipes though...... I have seen bottled marsala sauces somewhere though.....
 
I use Emeril's recipe for chicken marsala. I usually double the sauce recipe, if I remember correctly. I also make chicken parm by grilling the chicken and using a marinara sauce and melt the mozzarella cheese on top. No, it's not the same as breaded and fried, but it's still good. You could also consider a large grilled chicken salad of some sort (Italian or Caesar).

If you don't have to take a main dish, you could also make some nice steamed broccoli with butter and parm cheese or sautéed green beans.

of course. That would work great for taking to a potluck. While I'm too late to scout out deals, getting frozen meatballs is very do-able before this event. Thank you.

I think I might combine that with McKelly's idea of an italian sauce.

Have you tried Dreamfields pasta? It has only 5 digestible carbs per serving. My husband and I are both diabetic and this pasta is wonderful. It tastes great but it is a little pricey.
 
What about eggplant parmesan? Cheaper than chicken. You could just grill the eggplant and not bread it, or "bread" it with parmesan cheese.
Easy dish to make for a crowd!
 
Roasted vegetable lasagna is easy and relatively in expensive and simple to do.

Slice and roast veggies like eggplant, zucchini, squash, carrots, red yellow and or green bell peppers. Layer them in a pan with sauce and a mixture of ricotta, mozzarella cheese, egg, oregano and some grated parm.

Bake in the oven at 350 for about 45 minutes. As with any lasagna it is best after it sits for a while or even reheated the next day.

To roast the veggies, slice them lay on a baking sheet and drizzle with olive oil. Roast in oven at 450 for about 30 minutes

I'm also diabetic and Dreamfields pasta is one of my favorite foods :cloud9: As you say, the taste is wonderful :goodvibes It's worth spending the extra, I think. You can often find coupons... I stock up when it goes on sale. ;)

If you need to limit carbs give it a try! :thumbsup2

Bbq sauce and sugar are very high in carbs. OP, I like the sausage and pepper idea. Dreamfields pasta is also delicious.
 
How about minestrone soup? It does have pasta in it, but you could up the beans and veggies and just put a smaller quantity of pasta in, if any. The soup I have had in the past had very little pasta in it, in fact, come to think of it, I may have had some without any in it at all.......

I was going to suggest the same thing, it is really tasty and you are right a little pricy I think around here $2 a box but well worth it if you are watching carbs:goodvibes
 
A salad might be a nice addition if everyone is bringing pasta. I know a lot of people are watching their carbs now.
