OH, just HAD to post, our FAVORITE go along with the fresh salsa (by the way, great recipe above) is FRESH guacamole, YUMMY
so simple an SO delicious and a healthy Fat too!
Scoop out avocado (I use 2 ripened ones) a little soft, NOT mushy.
chop several slices of onion in small pieces
add a bit of cilantro (we add a double bit)
small tomato chopped up small
1/2 fresh garlic clove, chopped small
using fork tines, press down all together, leaving some lumps,,,,THEN take a LIME and squeeze (1/2) lime in.
Dash of fresh pepper and salt, cover tight with plastic wrap and chill.
Serve with color/flavored chips, OH, my mouth is already watering
My family/company ALWAYS enjoys this.... with fresh salsa too!
