Cooking Need a good, easy Salsa recipe

Tasty, easy, Salsa
(all measurements are approximate)

3-4 large ripe tomatoes, diced
1/2 small red onion finely chopped
2 cloves minced garlic
1/2 cup diced green pepper
1/3 to 1/2 jalapeno pepper diced (or the whole thing if you really like hot)
2 tablespoons cilantro or parsley chopped
Red wine vinegar to taste (2 to 3 tablespoons)
Salt to taste.

Mix all ingredients and enjoy!!
 
OH, just HAD to post, our FAVORITE go along with the fresh salsa (by the way, great recipe above) is FRESH guacamole, YUMMY
so simple an SO delicious and a healthy Fat too!

Scoop out avocado (I use 2 ripened ones) a little soft, NOT mushy.
chop several slices of onion in small pieces
add a bit of cilantro (we add a double bit)
small tomato chopped up small
1/2 fresh garlic clove, chopped small
using fork tines, press down all together, leaving some lumps,,,,THEN take a LIME and squeeze (1/2) lime in.
Dash of fresh pepper and salt, cover tight with plastic wrap and chill.
Serve with color/flavored chips, OH, my mouth is already watering :cool1:
My family/company ALWAYS enjoys this.... with fresh salsa too!

Mine is even easier. :)

Chop up some red ripe tomatoes, put them in a bowl. Add some chopped white onion, cilantro and jalapenos (you can just add juice or you can skip that totally if you don't want hot), add some garlic and mix it up. You can puree it if you want it runny but I like chunky so this is perfect. I also add a little bit to smashed avocado to make guac. Easy, and fast.

Buy the fresh salsa at Sam's Club. No mess, no fuss and sooooo good!

The fresh recipe above looks good, but an easier thing I do in a pinch is open a jar of your fav. brand, add some corn (fresh cut off the cob if we have left overs) and some black beans, some fresh onions (love the green onoins-they taste really fresh), fresh chopped tomato if you have one, cilantro ( a must for the fresh taste) and maybe some spices like cumin, chili powder or red pepper if you like it hot.

It makes the jar of salsa double in size and freshens up the taste. We usually polish it all off!
 
This is my DSIL's recipe, and she's a Texan where they take their salsa seriously! It is soo easy, and sooo good and fresh-tasting. I get tons of compliments whenever I serve it.

1 28-oz. can peeled, whole tomatoes
2 4-oz. cans chopped mild green chilis
2 bunches green onions, thinly sliced well into greens
½ cup fresh cilantro, stemmed and finely chopped
Salt & garlic powder to taste

Pour tomatoes into large bowl, with juice. With clean hands, squeeze and break apart tomatoes into small, mushy pieces. Add both cans green chilis, with liquid. Add chopped onion. Add chopped cilantro. Add approximately 1/2 tablespoon salt, more or less to taste; and 1/2 tablespoon garlic powder, more or less to taste. Stir, chill, and serve with tortilla chips. Makes approximately 1 quart.
 
This is a recipe that my wonderfull sister in law gave me and it has salsa in it and oh so yummy!!
and soooo easy!!!!

1 cup chunky salsa
1 -8 oz cream cheese
1 can green giant mexican corn
1/2 package taco seasoning-I usee less

Heat in Microwave until hot serve with tortilla chips
Eat and Enjoy!!!!!!

This sounds so good and easy to make. I'm going to give it a try! :stir:
 
Here's a really simple one given to me by a co-worker with the last name of Flores! It's amazing.

1 large can diced tomatoes - do not drain
1 large white onion - quartered
1 small can diced jalepenos - I usually only use about half of it
2 cloves fresh garlic - adjust to taste
cilantro - I love this stuff and usually use at least half a bunch of it
fresh lime juice
salt
freshly ground pepper

Toss all this into your blender and blend well. Taste and then make adjustments according to your tastes. Pour into jars and then toss in the fridge for a day so that all the flavors can get to know one another. We eat this on everything...really good on eggs, chicken, or out of the jar at midnight.
 
Something else I add but it can't be found everywhere is Tomatillos, little green tomatoes. 1 tomatillo for 2 large red tomatoes. Also, if you want it chunky but slightly runny you can use a masher and press it together a bit, that makes it juicy but still chunky. I've done it with canned tomatoes but it tastes so much better with fresh tomato IMO. :)
