Need a breakfast casserole w/ ham

I am on the lookout for a good breakfast casserole with ham, not sausage. TIA!!!
 
I found this online:


18 (1 ounce) slices white bread, cubed
8 ounces cooked ham, cubed
2 cups shredded Cheddar cheese
1 1/2 cups diced Swiss cheese
6 eggs
3 1/2 cups milk
1/2 teaspoon onion powder
2 cups crushed cornflakes cereal
1/2 cup butter, melted
DIRECTIONS
Lightly grease a 9x13 inch baking dish. Line the bottom of the dish with half the bread cubes. Sprinkle with ham, Cheddar cheese, and Swiss cheese, and top with remaining bread. In a bowl, beat together the eggs, milk, and onion powder. Pour evenly over bread. Cover, and refrigerate overnight.
Preheat oven to 375 degrees F (190 degrees C). In a small bowl, blend the crushed cornflakes and melted butter. Spread evenly over the casserole.
Bake 40 minutes in the preheated oven, or until bubbly and golden brown. Let stand 5 minutes before serving.
 
Here's mine. It works with ham, bacon or cut-up smokey links.

Grease 9 x 13 pan. Remove crusts from 6-8 pieces of bread (enough to fit bottom of pan) Butter both sides of bread and place in pan.

Sprinkle with 1 to 2 cups of sharp shredded cheddar.

Add meat on top of the cheese.

Whisk together 12 eggs, 1 cup milk, 1/2 tsp dry mustard, and 1 tbs salt.

If desired, add 1 small can diced green chile to the egg mixture. (In my home, this is a requirement but your family may not care for spicier food. It's perfectly good either way.)

Pour egg mixture evenly over bread/meat. Cover pan with foil and refrigerate overnight.

In the morning, preheat oven to 300 degrees. Cook 45-60 minutes--until a knife inserted in center comes out clean.

I make this all the time and just brought it to a department luncheon yesterday. It was all gone by 10:00 a.m. :teeth:

Wow, that's a LOT of eggs. What is the consistancy of this once it cooks. It's it like scrambled eggs (but not scrambled), french toast???

Nope, the bread absorbs the eggs overnight. Once it's cooked, you can't tell where the eggs end and the bread begins. I guess it is sort of like the consistency of scrambled eggs.
 
I've found that most breakfast casseroles that call for breakfast sausage that ham can easily be subsituted without any effect on the final turn out of the casserole.

that is like mine as well, except I use hash browns. The kind like McDonalds uses. The preshaped type.
 
Here is another one

Hash Brown Quiche

3 cups frozen loose-pack shredded hash browns, thawed
or packaged refrigerated hash browns
2 cup butter or margarine, melted
1 cup diced fully cooked ham or bacon
1 cup shredded cheddar cheese
3 cup chopped green chilies
2 eggs
1 cup milk
1 teaspoon salt
3 teaspoon pepper

Press hash browns between paper towel to remove excess moisture. Press into the bottom and up the sides of an ungreased 9-inch pie plate. Drizzle with butter. Bake at 425° for 25 minutes. Combine meat, cheese and green chili; spoon over crust. In a small bowl, beat eggs, milk, salt and pepper. Pour over all. Reduce heat to 350°; bake for 25-30 minutes or until a knife inserted near the center comes out clean. Allow to stand for 10 minutes before cutting.
