I am buying a 6 day Hopper with non expiry. I am only planning on using 3 days of it on this upcoming trip. I was told to upgrade to a 7 day would be about $24 (for both tix)

Fast foward to next year when I go back again, can I upgrade to that extra day then and would it be the same price?

Hmmm, probably not the same price. I would expect a price increase in January. IMHO, I'd upgrade now.
 
Once you start using a pass, I don't believe you can upgrade it in the manner you are talking about.
 
I was told that you can upgrade an existing pass within the first 7 days of its lifespan (someone else claims the first 14 days). Beyond taht time the pass can only be traded up towards a new pass with what you want.

When adding non-expiration and also adding more days, at least think about how many days you will be needing on your trip further out in the future. If during a vacation you needed to buy a new pass part way through and neither the old pass nor the new pass was a 10 day pass, you miss out on the biggest bargain.

Admittedly the added cost of non-expiration makes the 8'th non-expiring day cost $51. byt the 9'th and 10'th cost $4. each. Still, compared with 7 day non-expiration, 10 day non-expiration is almost always better.
