My Mom has Pancreatitis - needs a fat free diet, HELP!

My Mom went to the ER last Wednesday afternoon with severe abdominal pain and nausea. After 8 hours in the ER, they admitted her to the hospital. She was released today but with strict orders to eat a fat free diet. I've seen lots of low fat items in the stores, but not so much for fat free. Anybody have any good fat free recipes? She can eat pasta, chicken, veges, fruit - no red meat. I haven't seen the whole list of foods because my sister who lives with her has it.
The doctors say she still has to have her gallbladder removed. They have to wait until her pancreas calms down and the gallbladder stops excreting excess bile (gross factor - she has a tube draining the bile into a bag right now). At 86, I was hoping she could avoid surgeries, diseases, etc. but I guess that was not to be. Anybody have experience with pancreatitis?
 
I'm a dietitian that specializes in GI diseases. You can not eat a fat free diet, you body needs some fat to function properly. what your Mom needs is a low fat diet.

Good foods- vegetables, fruit, lean sources of meat, like white meat skinless chicken or turkey, very lean beef, or fish. All cooked without added fat (oil, butter, etc).

Fat free dairy like skim milk or fat free yogurt.

Low fat carbohydrates, bread, rice and pasta or OK, thinks like pastries, crossiants are not.

Avoid adding fat to food- limit salad dressings (something like balsamic vinegar alone or fat free dressing is fine) No oils or butter. Use a cooking spray to keep things from sticking.

Stay away from snack foods like chips, crackers (unless low fat or fat free) hummus, dips, etc.

I know people who have had pancreatitis, and the results were not good. Make sure your mother does what they tell her to and goes to the hospital immediately if her symptoms worsen or if she starts retaining fluid.
