"Must see" holiday oriented sites in Orlando?

We always travel to Orlando in February (we are next year as well) but we'll be heading down a second time for a wedding from 12/26 - 1/1.

So, a question for those who have been there during the holidays before. Are there any holiday related sites that one should make a point of seeing? How about New Years eve? Where do you want to be?
