Two positively yummy recipes to share!

Walnut Orange Muffins
1 c. butter or margarine, softened
1 c. granulated sugar
2 eggs
1 c. buttermilk
4 T. grated orange peel
2 c. flour
1 tsp. baking soda
1/4 cup chopped walnuts
1 c. orange juice
1/2 cup packed brown sugar
Pre-heat oven to 350 degrees. Grease or paper-line 18 muffin cups.
In a large mixing bowl, cream butter and granulated sugar. Beat in eggs, buttermilk and orange peel.
In another bowl, combine flour and baking soda; add this mixture to the creamed mixture, stirring just to moisten. Fold in walnuts.
Fill muffin cups 2/3's full. Bake 20 minutes or until a toothpick inserted in the center comes out clean.
In a small bowl, combine the orange juice and the brown sugar until dissolved. Spoon over warm muffins. Cool muffins in pan for 5 minutes - then remove from pan to wire rack.
Makes 18 muffins. **Messy, but delicious!

Apple Cinnamon Muffins
1 and 1/2 c. flour
1/2 c. granulated sugar
1 and 3/4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1 egg
1/2 c. milk
3 T. vegetable/cooking oil
3 T. applesauce
1 medium tart apple, peeled, cored and grated
***Topping:
1/4 c. packed brown sugar
1 T. flour
2 T. cold butter or margarine
1/2 c. old-fashioned oats
1/4 c. finely chopped nuts
Pre-heat oven to 400 degrees. Grease or paper-line 12 muffin cups.
In a large bowl, combine flour, granulated sugar, baking powder, salt, cinnamon and nutmeg.
In a smaller bowl, combine the egg, milk, oil and applesauce. Stir this mixture into the dry ingredients just till moistened. Fold in apples.
***For topping, in a medium mixing bowl, combine the brown sugar and the 1 T. flour. Cut in the 2 T. cold butter or margarine till crumbly. Stir in the oats and nuts.
Fill muffin cups 2/3's full. Sprinkle topping over muffins. Bake for 18 to 22 minutes or until a toothpick inserted in the center comes out clean. Cool in pan 5 minutes.
Serve warm or cool.

Does anyone have any sugar free/splenda recipes? I can see where I could use splenda for part of it but the toppings/brown sugar...I'm not sure how that would work. But a thought! I love maple and brown sugar oatmeal...but can't have it. Now I buy regular instant oatmeal, add splenda and some sugar free maple syrup to it and its GREAT. I wonder if that would work?
