Last weekend I still had some turkey lunch meat that needed to be used & had just gotten some ham, so I decided to try this. I'd found it online while doing a search for Disney recipes. It's not an actual Disney recipe - just something someone invented - her son loved the Monte Cristo Sandwich at the Blue Bayou in Disneyland.

As usual, I made some adjustments. :rolleyes: I never buy the frozen French toast since I made it from scratch...so I just used bread. It worked fine IMHO. I also don't buy strawberry ice cream topping & thought I'd just use strawberry preserves. As it turned out I was out of that so I substituted red raspberry preserves. That worked really well since I sliced a peach that needed to get used & mixed it with the strawberries. (I'd seen another "real" recipe for the Monte Cristo which called for a mix of peaches & strawberries to be used.) It was really a hit with everyone but DH. He thought that the ham flavor was too strong & that I should have used "real" ham. Of course what does he know? I've done that substitution in the past & baked ham always has a much stronger flavor than luncheon meat does. :confused3 DD just told him he should eat something else as that would mean she could have it for lunch the next day. :rotfl:

Monte Cristo Casserole
Serves: 12

1 c nonfat milk
6 eggs (or 1½ c egg substitute)
2 pkg frozen French toast, slices,thawed (12½ ounce size)
8 oz deli ham, diced
8 oz deli turkey, diced
4 oz swiss cheese, grated
¼ c fresh parsley, snipped
1 Tbl powdered sugar
2 c fresh strawberries, sliced
½ c strawberry ice cream topping

Preheat oven to 375 F. Pour milk in a microwaveable container and heat until hot. Whisk eggs in small bowl and add hot milk to eggs, blend. Cut French toast into ¾ inch cubes; place in a large bowl. Pour egg mixture over bread cubes, toss gently, set aside. Combine ham, turkey, cheese and parsley in a bowl. Spray a 13x9x2 inch baking pan with cooking spray. Layer half the French toast cubes with half the meat mixture in bottom of pan. Repeat. Let stand for at least 10 minutes (It can be held overnight.) Set at room temperature for a few minutes before baking-or bake a little longer if it's cold.
Bake 30-35 minutes until golden brown and set in center. Cool 10 minutes. Sprinkle with powdered sugar. Slice strawberries. Combine strawberries with strawberry ice cream topping in a small bowl. Cut casserole into squares. Serve topped with strawberry mixture.
