Cooking Molasses Cookies

These were thick and chewy. Went great with my morning tea. The kids(ages 2-12) devoured the first batch she made for us! I had to beg for more!!!!!

Ginger Molasses Cookies

4 1/2 c all-purpose flour
4 tsp ground ginger
2 tsp baking soda
1 1/2 tsp ground cinnamon
1 tsp ground cloves
1/4 tsp salt
1 1/2 c shortening (not butter or marg)
2 c granulated sugar
2 eggs
1/2 c molasses
3/4 c granulated sugar or coarse sugar

Stir together flour, ginger, soda, cinnamon,cloves and salt. Set aside
Beat shortening until softened. Gradually add 2 c granulated sugar; beat until fluffy. Add eggs and molasses; beat well. Add half of flour mixture; beat until combined. Add remaining half.

Using a 1/4 c ice cream scoop, shape dough into 2 inch balls (get real; just shape into balls unless you have a 1/4 c scoop??). Roll in the 3/4 c sugar. Place on cookie sheet and bake
 
This is my favorite recipe, although it always works best to have a second set of hands to hold the bowl while you stir in the last of the flour. ;)

Cry Baby Cookies

1 c brown sugar
½ c shortening
1 tsp baking soda
1 Tbl boiling water
1 c molasses
1 Tbl ginger
1 Tbl cinnamon
1 c strong coffee
flour

Blend sugar & shortening. Dissolve baking soda in water & add to molasses, then combine with sugar/shortening. Add spices; mix well. Add boiling coffee. Add enough flour to make a soft dough. Roll out ½” to ¾” thick. Cut in rounds. Bake in a quick oven 15 minutes. “Eat one & children cry for more; hence the name Cry Babies.” This recipe was handed down through someone’s family since George Washington’s time.

Usually an ingredient is listed twice like that because different amounts are used at different times in the process. In this case, the 2 cups are added to the batter of the actual cookie. The 3/4 cup is for rolling the ball in before placing on the baking sheet.

I've found that people do this because so many read a recipe quickly...and if it simply said 2 3/4 cups sugar people would put the whole amount into the batter. ;)

Of course another reason might be that the 3/4 cup can be either regular or coarse sugar. I'm not sure that using coarse sugar in the batter would produce a pleasing end result in the cookie itself.

Don't worry about it! I do the same thing all the time...read the ingredients to make sure I have them w/o reading the directions. ;)

Seriously I have recipes where I've changed the way they were written & separated the total amount of an ingredient because it gets added twice. It's just whatever you find easiest to work with.
