Ok, so Im checking in expecting to have pages to read and....nothing! where the heck is everybody?!!!

I have been busy all day until now, so at least I have an excuse! LOL

Nell - I got a second turkey too while holiday grocery shopping, since I couldnt pass up the .47 pound! I cooked mine yesterday! haha, I like turkey better than chicken, it was cheaper, and there is so much to do with it...mine is going to be turkey soup, turkey salad, and lunch to bring to work this next few days with some green beans and sweet potato! Hey, when I commented on your visit to the other thread, I didnt mean that your comments might have caused them any trouble...I meant that I wondered if it would stir up their little gossip mill again! Sorry if you misunderstood!

Bev - hope your knee feels better soon...dont overdo it! My shoulder bursitis was sort of letting me know it was there again for a few days and I ignored it and went ot the gym anyway, and ended up waking up a few days later barely able to even move it!! I am heading back to the gym tonite after taking 3 nights off to rest it...seems a bit better now.

I agree with Kathy, I would love the snow if it could be a minimum of 60 degrees at the same time!! I HATE the cold these days...anything under 50 and I am whining like a baby!:laughing:

Carol - glad you are better today, although it sounds like the rest of the family is going to be following you into the flu...praying for everyone else to feel better too. I cant imagine trying to stay on plan during a sickness like you have had!

I got an e-mail from GeorgiaLee today! Just reporting in that she is having blood sugar trouble too still on step 2, just like me, and getting no real answers from Diane as to what might be causing it or what to do. she wanted me to pass along her hellos to you all here, so here they are!

Out of here in a few and heading to the gym...raining hard, cold and nasty outside....hope all you snowbirds havent sent that my way too!:scared1:
 
Good evening everyone!! Not much going on here tonight. About ready for bed. Forgot to tell you all I did my muffins last night with raspberry syrup and I mixed in some cream cheese. It was to die for!! I need to figure out how many carbs are in it as I'm using all ground pecans except a couple spoonfuls of flax to off set the carbs a bit. It was sooo good. Tonight I was wanting something sweet, so I made myself a bit of vanilla milk. Just put a bit of splenda and vanilla syrup in my milk. Hit the spot. Now I'll sleep like a baby. I notice if I have just a bit of milk before bed, I sleep really well.
Well I believe I'll take Tyson's cue. He's on his pillow snoring away. I'll have to tape him dreaming for you all some time. It is so funny!! His legs are moving like crazy and he snores and does puppy wimpering. Then his jowls fill with air, and "poof" out again. We get such a laugh out of it.

Back from the gym and Im pooped too! I dont seem to have a whole lot of energy these days...for me anyway!! Must be the lousy weather....ugh...

Barb - believe me I did NOT send any wishes back to Georgia!! Or give her anything at all on us here...just sent back that I was sorry she was having trouble and hoped all was well...basically a one liner! I was as shocked as anyone to see the e-mail!!

Nell - NO snow machines on the Godiva Ride!! Thats where I draw the line...if Pony is going to be naked on a pony (heehee) it better be WARM WARM WARM!!! Unless of course, the snow is FAKE! Funny how Georgia e-mails me after you posted yesterday...hmmmm, no info for her!! LOL

Lisa - sounds like you had a very busy day!! Plenty of time to decorate, my friend!! Relax and put your feet up for awhile!!

Kathy - OK, now you have me interested in the muffin thing...that sounds SO good!! Post the recipe for me again please...didnt write it down before since you didnt sound too excited about the muffins yourself, but cream cheese and
raspberry syrup would definitely make it a keeper for me too! Too funny about Tyson dreaming...my Harley snores when he is awake!! When he sleeps, he wheezes, gasps, groans...like hes running a mile or something...keeps me awake sometimes hes so loud!

How much longer are you staying there...I swear I HATE step 2 and want to go back....it just does not agree with me and my blood sugar at all...and I have only lost another 3 pounds since leaving step 1 the first time...GRRRRR of course I know the working out is probably turning some flab to muscle which weighs more but still....What the heck?!! I am e-mailing Diane again on Friday, and threatening to return to step 1 forever!! We'll see what she has to say...she hasnt been able to explain my lack of progress and sugar trouble at all...just says there is no way I have been THIS GOOd, and havent lost more...but my tape measure has not moved a bit on the hips or waist since starting step 2...making me CRAZY!!!

Pony, are you still planning on talking to your doctor again about trying Thyroid treatment? We'll keep brainstorming with you to figure things out. You have lost significant weight overall though. That's something to keep in mind even if your not equaling the chart. If your doc won't talk about it, does your health insurance allow you to consult an endocrinologist? We can help with research on one in Virginia that is open minded to newer types of treatment. There is hope, don't despair! :hug:
 
Barb - I posted the Cream Cheese Gingerbread Muffin recipe on the recipe thread. I was sure I had posted before, but couldn't find it. Here it is too:
CREAM CHEESE GINGERBREAD MUFFINS
These muffins are light and cakey in texture. They do become dense upon chilling, however, they are best served at room temperature.

8 oz cream cheese, softened (250 g)
2 eggs
11/2 cups ground almonds (375 mL)
1/3 cup vital wheat gluten, OR vanilla whey protein for gluten-free (75 mL)(I used coconut flour by accident, but it was fine)
1/4 cup SPLENDA® Granular (25 mL)
1/4 cup powdered erythritol (25 mL)
1/4 cup Da Vinci® Sugar Free (50 mL)
Gingerbread Syrup (I used vanilla syrup and doubled the amount of the spices)
1 tbsp olive oil (15 mL)
1 tsp vanilla extract (5 mL)
1 tsp cinnamon (5 mL)
1/2 tsp ground ginger (2 mL)
1/2 tsp ground cloves (2 mL)
1/2 tsp molasses (optional) (2 mL)
2 tsp baking powder (10 mL)
1/2 tsp baking soda (2 mL)
I added 1 cup chopped pecans

In food processor or in bowl with electric mixer, process cream cheese until smooth. Add eggs; process. Add ground almonds, vital wheat gluten, SPLENDA® Granular, erythritol, Da Vinci® Sugar Free Gingerbread Syrup, olive oil, vanilla extract, cinnamon, ground ginger, ground cloves, molasses (if using), baking powder and baking soda; process until well combined and most lumps of cream cheese have been incorporated.

Fill 12 greased muffin cups about half to two-thirds full. Bake in 350°F (180°C) oven 18 to 20 minutes, or until golden brown and cake tester comes out clean.

Da Vinci® Alternative: Use water and sweetener of choice to taste.

Nutritional Analysis: 12 mufffins, 1 muffin:
172.9 calories; 8.0 g protein; 14.0 g fat; 3.4 g carbs - They really are quite like muffins and not something low carb!! I put a little bit of cream cheese with splenda and cinnamon in it on top of them.

My batch made more than 12 muffins -guess my muffin pan is small!!

Kathy's mufins sound really yummy, too and I still have some raspberry syrup!!

Robin - the basic recipe she uses is on the recipe thread, I think. I just went back and looked through the old forum recipes and I know it is there. Let me know and I can try to re-find it.

Nell - sorry there isn't more activity here. It really is fun to have lots of posts to read.

I was grating a block of cheese in the food processor today and then grated up a couple of zucchini. I found a recipe that sounded good for zucchini bread or muffs so will hopefully try that tomorrow.

Robin - It will be interesting to see what Diane has to say again about step 2 and all the carbs. As I said earlier today after reading some of the posts on the OTHER site, quite a few people are reverting back to step one and it seems to be with Diane's approval. I think it is safe to say I am just a low carber enjoying all of you and simply trying to eat every 5 hours.

Carol - glad you are feeling better, but sorry to hear the rest of the family is not doing well. This is a tough time of year and people seem to get too tired and then sick.

I didn't get my swim in today. I think I'll make the longer drive tomorrow and go to the indoor pool and the organized water aerobics class.

Lisa - keeping my fingers crossed that the people put in an acceptable offer on the house.

I bought a larger crock-pot when Costco had them on sale last week. Of course, the question came up where was I going to put a second one, but I found a hole!! I have a nice batch of taco meat simmering away in it and can actually stir it once in a while without it going everywhere. That will give us salads for a bit. I'll freeze half of it for later in the month, too. Lots of eating out this month, though - but think I will do OK. I'll have 2 months after Christmas before we go on a trip to try to undo any real damage!:lmao:

Good night to anyone reading this on Wenesday and hope those reading this on Thursday AM had a rest filled night without too many doggie noises!! We used to let our cats sleep with us and they tried to take over the entire bed. We had one we called General Motors because his purr was so loud. We didn't want to disturb him after he was asleep!!!

Good morning all!! Hope you all had a great night sleep. I slept like a rock again.

Barb and Robin, here is the recipe, and the link with all the variations of the muffin. It is a long thread, but well worth the read for all the different ways to flavor the muffin. I omitted the cinnamon and added the cream cheese (in small chunks) and the syrup. I then beat the heck out of it to try to "cream the cheese" LOL. My cream cheese wasn't room temp when I made it, and there were tiny bits of warm cream cheese through out the muffin. And I used all ground pecans except for a spoonful or two of ground flax to help offset the carbs a bit. Not sure of the carb count on the ones I made, but everything in it is legal.
It is in the recipe thread on page 4 :)

Minute Miracle Muffins
1/4 cup Flax Meal
1/2 teaspoon Baking Powder
1 packet Splenda
1 teaspoon Cinamon
1 Egg
1-2 teaspoons Butter

1.5 Carbs

Mix the dry ingredients in a large coffee cup. Add egg and butter; mix well. Microwave for 50-seconds to 1-minute. Muffin pops right out.

Slice in half and butter or use cream cheese frosting.

I didn't have flax or almonds, so I ground up some pecans. Then added about a spoonful of the flax with the ground up pecans to make 1/4 cup.

To make a "bread" just omit flavorings, and microwave in a square container. This is a versatile recipe, so you can add any flavorings/nuts you would like to try.
You can also double or triple the recipe and put into a loaf pan and bake in the oven.

I am including the LCF link for these as there are many variations there for it. Hope it's ok.

Nell - love the new picture. I tried putting something else on Facebook, but couldn't figure out Photobucket. I know someone else told how to make pictures smaller without using Photob, but I seem to have lost that info. If someone could easily re-post those directions, I would be really grateful.

Hi, Jocelyn. I have the power cord problem too. I like to sit in bed with my coffee and laptop (like right now) and it ruins the powercord. It also ruins the connection inside the computer that allows the battery to charge. So, I generally have to keep it plugged in. This is probably the third laptop I have had so I know it is the way I sit with it that is the problem - not the computer. Anyway, I hope you have your powercord!

I wanted to tell you that I don't use Photobucket for my FB pictures. Just regular jpegs work just fine. I send pictures to facebook directly from my phone or I just upload them from my computer with no problems.
 
Any thoughts on the Tiger Woods debacle? My vote is he is far from "clean" in this matter!

Well, more has been revealed since your post. I am sorry that their problems are so public but my feelings about people that cheat on their spouses are that they get what they deserve! Although, his wife and children certainly don't deserve to be miserable.....
 
Robin: I usually don't like to prejudge, but I think Tiger brought some doo-doo home and that poor wife of his has two babies! If he did that to me, I'd beat his car and more LOL!

Ha ha has. I just read your post Lisa - so well put. You are so cute. You are right, he brought doo doo home. And, I think that that is exactly what his wife did - beat his car! Brad is a huge golf fan. He loves golf. He said that he has lost respect for Tiger and that he is just going to have to root for Phil Michelson now.
