Im looking for any unknown "hidden gem" places to view the MK Fireworks.

Much of the current MK shows are designed around the projected images on the front of the castle.
If you are interested in seeing the entire presentation as it is designed, you need to be able to see the front of the castle. (See map below.)

OTOH, If you just want to see "fireworks," you can pick any spot (Fantasyland is a popular choice) with a clear view of the sky.
