Our first day at a park is August 27. We want the first day to be Magic Kingdom because it's what our two daughters (3 & 5) will love the most.

It has extra magic hours in the morning so some crowd calendars suggest to avoid it that day, however I'm not sure the crowd calendar write ups take into account the time of year.

It shows this whole week being anywhere from 3/10 to 5/10.

Should we concern ourself with this considering it's low season. Will any park regardless of extra magic hours really be busy?

If you are onsite and will make it to the EMH you can do it and will have larger crowds than other days by midmorning but will be able to get through more lines during the EMH unless you plan on using it to see Anna/Elsa or Enchanted Tales, if you are offsite or won't be able to be there at opening you will lose all of the short lines at the beginning of the day as well as having longer lines all day- only you can make the decision on what you want to do.

We went the end of August last year and I wouldn't consider it a 3/10. Probably more a 5 or 6. I wouldn't worry about the crowd calendar - I would go really early or late due to the weather. It is just so hot that we go for early EMHs and late EMHs. I hope that helps.

While the non recommended day will still be better than the recommended day during Christmas week, the recommendations actually make a bigger difference during slower times ... Mostly due to entertainment not being available every night.
So, if you go the the non recommended park on a 3 day, you'll probably look around at noon and wonder why anyone listens to crowd calendars - cause it's going to look like a 7 to you.
If you have park hoppers, I would start at MK (before RD) and then hop to the recommended park.
BTW, I will be there Aug 20 to Sept 5 and will be following Josh's recommended parks most of the time (EasyWDW)
Just wanted to add ... A lot of people agree with your thinking of going to MK first cause it's what the kids love most, but - especially if it's their first time - you might consider building up to MK so the other parks won't be a let down...

Yah, I think maybe we will wait on MK and just follow the recommended parks.
