A search for "after hours" on the Disneyworld website will quickly pull up a page with all events and attractions.

Follow the link @Gehrig1B posted & click on the What’s Included for a partial list. They won’t post a complete or guaranteed list, gives them flexibility day of in case rides are down or need maintenance. There are a few things that are usually not open… Carousel of Progress & Hall of Presidents for example.
