Just got back from 5 nights in Nassau (Comfort Suites/Atlantis trip) on Friday night. Finally caught up on your report!
I loved your post on how the cruise came to be- from your very descriptive reporting of your conversation with John, to your itchy "modify" finger.
I think you made an excellent choice for an excursion for Nassau- since you are not big fans of snorkeling, this tour will still allow you to see the beautiful, amazing sea creatures of the Bahamas (BTW- your camera has an aquarium setting, which may be good for this portion of your trip)
We did a land tour during our trip too, and enjoyed it. We toured Fort Charlotte, not Fincastle (we went by this), I wish we had done both- Ben loves history.
There is also a pirate museum- we have gone a couple of times during past trips, it is ok. Probably about an hours worth of fun Admission is $12 per adult/$6 for Hunter(up to age 17). Again, near the cruise port but I can't remember exactly where. Here's the website.

Rum cakes ROCK!!! We saw the factory (I think it was on Bay Street near the cruise ship port, but not positive), but as a previous poster has said, you can probably find them around other places as well. We are partial to the Tortuga cakes, made in Grand Cayman, but available everywhere. Seriously, this was the only souvenir we purchased last week. One small Key Lime Rum cake for Nate, $7 declared on our customs form.
Atlantis is awesome, but there is so much there that one day is truly not enough to appreciate it all. We were there 4 full days and never got bored.
