Mexican desserts

After all the Mexican food and jalapeno hinney...I would suggest Pepto Bismol for dessert:)
 
I've made this before for Mexican potlucks. It's easy, different, and good!

Apple Enchilada DessertSUBMITTED BY: ReDonna

"Apples rolled in flour tortillas. VERY delicious, easy and fast to make. Substitute apples with peaches or cherries if desired."

INGREDIENTS
1 (21 ounce) can apple pie filling
6 (8 inch) flour tortillas
1 teaspoon ground cinnamon
1/3 cup margarine
1/2 cup white sugar
1/2 cup packed brown sugar
1/2 cup water
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Spoon fruit evenly onto all tortillas, sprinkle with cinnamon. Roll up tortillas and place seam side down on lightly greased 8x8 baking pan.
Bring margarine, sugars and water to a boil in a medium sauce pan. Reduce heat and simmer, stirring constantly for 3 minutes.
Pour sauce evenly over tortillas; sprinkle with extra cinnamon on top if desired. Bake in preheated oven for 20 minutes.
Makes 6 large tortillas; may be cut in half to serve 12.
 
We're having a Cinco de Mayo block party and I've been asked to provide a dessert. I have some great appetizer recipes, but I'm clueless about desserts.:confused3

The neighbors have probably got a whiff of the aromas coming from your kitchen and figured they would be safer with a desert:lmao: :rotfl2:
 
Let's see. I pulled my Mexican Fiesta cookbook from the shelf. Lets dee what looks interesting and/or easy.

*Flan

*Mexican Sugar Cookies (Polvorones)
1 cup butter, softened
1/2 cup powdered sugar
2 TBS milk
1 tsp ground cinnamon, divided
1/12 to 1 3/4 cups all-purpose flour
1 tsp baking powder
1 cup granulated sugar
1 square (1ounce) semisweet chocolate, finely grated

1. Preheat oven to 350*. Grease cookie sheets; set aside.
2. Beat butter, powdered sugar. milk, vanilla, and 1/2 tsp. cinnamon in a large bowl with electric mixer at medium speed until light and fluffy, scraping down side of bowl once. Gradually add 1/12 cups flour and baking powder. Beat at low speed until well blended, scraping down side of bowl once. Stir in additional flour with spoon if dough is too soft to shape.
3. Roll tablespoonfuls of dough into 1/14-inch balls. Place balls 3 inches apart on prepared cookie sheets. Flatten each ball into 2-inch round with nottom of a glass dipped in granulated sugar.
4. Baje 20 minutes or until edges are golden brown. Let stand on cookie sheets 3 to 4 minutes.
5. Meanwhile, combine granulated dugar, grated chocolate and remaining 1/2 tsp cinnamon in small bowl; stir to combine. Transfer cookies one at a time, with spatula to sugar mixture; coat on both sides. Remove with spatula to wire racks; cool completely.
6. Store tightly covered at room temperature or freeze up to 3 months.

Makes about 2 dozen cookies.

I know I'm in the minority, but I hate flan! Blech!

If it were me, I'd do sopapillas or a dessert empanada. Fried ice cream is great, but doesn't seem too potluck-friendly.
 
Just go buy a load of Choco-tacos.... does that count?:rotfl:

I like the empanadas idea- stuff with caramel, chocolate and pecans then coat in cinnsugar.

Pipe strips of dough into hot oil using pastry bag. Fry until golden and drain on paper towels. Roll in cinnamon and sugar mixture.

Sombrero Cookies:

Slice and bake sugar cookie dough
gumdrops
colored non-parrels
container of vanilla icing

Slice the sugar cookie dough, roll edges in colored non-parrels and bake according to directions. Once out of the oven, cool completely. Take a gumdrop, place a dab of icing on the bottom and place on top of the cookie.
My dd has made these for school and they were a hit.
 
I think there is some sort of cinnamon/honey pastry thing that is from Mexico...but i am not sure.
Are you talking about flour tortillas cut into triangles, then fried and sprinkled with cinnamon sugar? I've seen this made with and without the honey. (With honey, you'd drizzle it on before sprinkling the cinnamon sugar mix.)

My HS Spanish teacher, who was from Spain, called them bunuelos.

There's also a wonderful caramel-flavored pudding, I think it's called dulce de leche?

Hmm - you could take this idea and mix it with my fruit salad idea and make a dessert "salsa".

Mince up some fruit - mango, paypaya, pineapple, strawberries etc then sweeten it with a little bit of honey and lime juice. Serve it with the sweet tortilla chips to "dip".
 
I've never made it, but I had it at a potluck once.

Dulce de Leche (Carmel) Cheesecake

Makes one 9" cake, serves 12.

Preheat oven to 400°

Mix
1 C graham cracker crumbs and 2T sugar
or 1 C crushed vanilla wafers
or 1 C crush chocolate wafers
3 T melted butter

Combine ingredients and press into a lightly into the bottom and sides of a greased 9" springform pan. Bake 10 minutes and set aside and reduce oven temp to 325°.


Mix
3 - 8 oz packages softened cream cheese
1 C granulated sugar
2 T flour
2 t vanilla extract
3 beaten eggs
1/3 C whole milk

Place the ingredients in the mixer in the order listed, and beat well between each addition.

Mix 1/2 C of cheesecake batter and one whole container of Mrs. Richardson's Butterscotch Caramel topping.

Pour remaining (plain) batter into crust. Spoon rounded tablespoons of carmel batter over the cheesecake batter and gently swirl into plain batter, like a marble cake.

Bake for 40 minutes, turn off the oven and leave the cake in another 20 minutes before removing. Let cool at room temp another 30 minutes before wrapping top in foil and refrigerating overnight or until completely cold. Serve with sweetened whip cream and warmed Mrs. Richardson's Butterscotch Caramel topping.
 
We also have a Cinco De Mayo block party! Last year I made Tres Leches cake and Empanadas. I have also made the mexican wedding cakes(cookies). I get all my recipes from allrecipes.com.

The easiest to serve would be the Emanadas. They can sit out. Flan...I wouldn't let it sit outside very long. The Tres Leches I kept inside until most of the adults had eaten, it still probably was out an hour, but it had chilled all night and was in my stoneware pan. Yum...I may make one this weekend. Yum.

Have a great time! Not sure our party is happening this year. Another party is planned on that day, a "going away" for an Australian family. Not sure Mexican food is the proper thing to serve at their party!

I don't have a recipe, but I just wanted to add, you don't need a pastry bag, just use a ziploc and cut the corner off and you have an instant pastry bag!

That does sound yummy. This whole thing is just an excuse for us to drink anyway. :teeth:
