Mexican desserts

If it's got liquor in it, it's gotta be good.

I use this basic crusty pound cake recipe:

1 1/2 cup butter, softened
3 cups sugar
6 eggs
1 Tbsp. vanilla extract
1 tsp. almond extract
3 cups all purpose flour
1/2 tsp salt

Cream butter well in a large mixing bowl (I use my kitchen aid); add sugar gradually, mixing until texture is fine and mealy. Add eggs, one at a time, beating aftereach addtion. Add flavorings. Combine flour and salt; stir flour mixture into batter, beating until flour is moistened. Do no overbeat. Pour into a greased and floured tube pan (I use a bundt pan). Bake at 325 for 1 hour and 258 minutes, or until toothpick inserted comes out clean and cake shrinks slightly from sides of pan. Cool in pan 15 minutes. Turn out onto a wire rack then turn right side up and cool completely.

Here is where I change ingredients for a margarita pound cake. Omit vanilla & almond extract and use tequila instead...maybe alittle more :goodvibes than what the recipe calls for, I use about 6 tablespoons.

Mix lime juice, tequila and powder sugar together to make a thin clearish icing and drizzle over cooled cake. I just mix until it tastes just about right..;)

If you want to make a filling, softened cream cheese, sugar, lime juice & tequila.

I use to have a tag about my margarita pound cake and sharing.
 
I am sooooo sorry...I will be on my way home shortly...but yesterday...was one of those days!!! Got my recipes out...then not a lot got done. I'll post ASAP!!! :)
 
This is my suggestion.

TORTILLA TORTE

12oz. pkg. chocolate chips
3 c. sour cream
10 – 7in. or 8in. flour tortillas
¼ c. sifted powdered sugar
choc. curls
fresh strawberries(opt.)

Directions: Melt choc. chips in med. Saucepan over low heat, stirring occasionally. Stir in 2c sour cream. Remove from heat. Cool. Place 1 tortilla on serving plate. Spread 1/3 c. chocolate mixture on top. Repeat with 8 more tortillas and rest of choc. mix. Top with last tortilla. In small bowl stir together last cup of sour cream and powder sugar. Spread on top. Cover and chill overnight. Before serving, garnish with choc. curls and strawberries.

It is really easy to make and looks pretty when you serve it. The slices don't have to be very big because it is a rich dessert.
 

Okay...here we go...

Flan

Caramel:

1/2 cup sugar
2 tbs. water

Custard:

2 cups milk
4 eggs
1/4 cup sugar
1/8 tsp. salt
1/2 tsp. vanilla
1/3 cup shredded or flaked coconut (optional)

1. For caramel: heat sugar and water in a small skillet, stirring constantly, until sugar melts and turns golden brown
2. Pour syrup into 1 qt. baking dish...tip pan to coat bottom and part way up sides.
3. Scald milk. Beat eggs; beat in sugar, salt, and vanilla. Gradually beat scalded milk into egg mixture. Pour into prepared baking dish. Sprinkle coconut on top.
4. Place baking dish in pain containing hot water which comes at least 1 inch up sides of dish.
5. Bake at 325 for 45 minutes to an hour.
 
Empanadas

Dough:

2 cups all-purpose flour
2 tbs. sugar
2 tsp. baking powder
1 tsp. salt
1/2 cup lard or shortening (never said it was healthy)
1/3 cup ice water

Filling:

1 cup chopped pecans
1/4 cup brown sugar
2 tbs. butter
1/2 tsp. cinnamon

1. Mix flour with sugar, baking powder, and salt in bowl. Cut in lard until mixture resembles coarse crumbs. Sprinkle ice water over flour mixture, stirring lightly with a fork until all dry ingredients hold together. (I do this in a food processor...and drizzle in the water)
2. Turn dough onto a lightly floured surface and knead gently for 30 secs. Roll out to a rectangle...about 12 inches by 18 inches.
3. With a knife, cut dough into 12 squares. Place a spoonful of filling in center of each square. Fold one corner over filling to meet opposite corner. Seal by dampening inside edges of dough and pressing together with tines of fork. Place on baking sheet.
4. Bake at 400 for 15-20 minutes. While still hot, sprinkle with cinnamon sugar.
 
Polvorones (Mexican Wedding Cakes)

1 cup butter...softened
1 tsp. vanilla
1/2 cup powdered sugar
2 cups flour
1/4 tsp. salt
1 cup finely chopped pecans

Extra powdered sugar

1. Cream butter with vanilla until light and fluffy. Add sugar, cream well. Mix in flour and salt, then pecans.
2. Shape dough into 1-inch balls. Place on ungreased cookie sheets.
3. Bake at 350 for 25-30 minutes, or until lightly browned.
4. Remove from cookie sheets...cool slightly...roll in powdered sugar.
