The chicken rocked!!!! That's the only way I'll roast a chicken again.

If that is the Goya Mojo I was supposed to get, I got the wrong thing. I got the Mojo Criollo Marinade, can I use this Lorie?

I don't know now I'm confused! Lorie will have to tell us!

I just got a call from the West Bank Quarterback Club (Athletic Association) and they've named Kyle the "Male Athlete of the Week/Month" not sure what he said, and he's going to be honored at the Four Columns next week.:goodvibes

Wow, I missed a lot just in the couple of hours I've been off of the computer!

Sheryl & Kathy- It is the Goya Mojo marinade in the bottle. Kathy, sounds like you got the right one. I've never used the paste, but that sounds like it would be good for grilling. As far as other Cuban recipes, nope, I don't really have others. My father was famous for roasting pork and other meats mostly. He actually had pig roasts in the backyard- an actual whole pig roasted in a dug up firepit lined with banana leaves. :eek: He passed his grilling skills on to me and I am the official grill-master in this house.

Terry- I hope the promotion works out for you! I don't know much about Jackson except that it has good museums and a restaurant that the Sweet Potato Queens frequent. I ate there once and it was really good.

I've seen specials on the food channel on the cuban pig roast! :eek: Complicated stuff. I'm glad you were able to pick up some of his skills.:goodvibes Hey, ropa vieja would be a good dish to cook in your dutch oven! I do it in the pressure cooker cus I'm lazy & don't usually decide what I'm cooking until about 5:00, but it's traditionally cooked very slowly.


Terry, I don't have anything more to offer than what Lorie just mentioned. We evacuated there once, & unfortunately somehow missed all the good things about Jackson! Evacuations do that I guess.

Lorie, Here's the recipe I use for that if you're interested. I've used flank steaks, brisket, even rump roast for this. It is good!


Cuban Ropa Vieja
Ropa vieja means old clothes in Spanish. This meat is cooked, shredded like rags, then briefly cooked again which gives it the Spanish name. Remember that Cubans love peppers, both fiery ones and the green bell peppers.


INGREDIENTS
1 tablespoon vegetable oil
2 pounds beef flank steak
1 cup beef broth or more to cover steak
1 (8 ounce) can tomato sauce or diced tomatoes
1 small onion, sliced
1 green bell pepper, seeded and sliced into strips
1 small can diced jalapenos or 1 fresh and/or diced green chilies
2 cloves garlic, chopped
1 teaspoon ground cumin
1 teaspoon chopped fresh cilantro
1 tablespoon olive oil
1 teaspoon white vinegar
salt, pepper or Cajun or Mexican Seasoning Mix
DIRECTIONS

1.Heat vegetable oil in a large skillet over medium-high heat. Brown the flank steak on each side, about 4 minutes per side.
2.Transfer beef to a slow cooker. Pour in the beef broth and tomato sauce, then add the onion, bell pepper, garlic, tomato paste, cumin, cilantro, olive oil and vinegar. Stir until well blended. Cover, and cook on High for 4 hours, or on Low for up to 10 hours. When ready to serve, shred meat and serve with tortillas or rice.
3.Alternate methods: Cook an hour and a half in a pressure cooker. Or in a covered pot on the stove several hours until meat is very tender & shreds easily.

Yes I was! We were looking for a new subdivision my DD said a friend of her's was considering buying a large lot. DD said it was a new subdivision with 3/4 to 1 acre lots in Waggaman & she was sure it was called Live Oak something. But we didn't see anything new, just the same Live Oak subd. that's been there. She tends to get confused with locations though, I'll have to call her again about it. The only thing we saw was the Rivet Subdivision, but we already knew about that. Did we miss something or is she confused?

DD is driving me nuts today! :headache: She's being very, very 2- stubborn, clingy, whiny, not listening AT ALL!! And won't eat what I've been fixing for her. This is a new development because she used to always eat whatever I gave her. I told her this isn't A&G Cafeteria and she was gonna eat what I fix, end of story! :rolleyes: I need a drink!

There is another new subdivision going up by Willswood Ln. I think they are going to put a small pond there and it is right on river road. The lots are supposed to be large because we fought the Wards over this issue. The Wards wanted to put low income housing there (a quick buck for them:headache: ) and we all stopped it. I love that area and a house there would be beautiful. Rivet has some nice lots and houses going up. But I would want a house as close to the river as possible because of the dump.

DD is driving me nuts today! :headache: She's being very, very 2- stubborn, clingy, whiny, not listening AT ALL!! And won't eat what I've been fixing for her. This is a new development because she used to always eat whatever I gave her. I told her this isn't A&G Cafeteria and she was gonna eat what I fix, end of story! :rolleyes: I need a drink!

Oh yeah, she's testing me alright- yesterday at the park, she BIT me as I was putting her in her stroller when we were leaving! :eek: She's never bitten me before! She bit so hard that she left a red welt and a purple bruise on my shoulder. I was so shocked that I didn't even know what to do!

I don't know, I used to be a semi-intelligent person! Especially when it came to food, not only did I confuse the word & language but the countries too. Mole is a Mexican sauce made with tons of different ingredients, mojo is typically a Cuban garlic citrus based sauce. Seee, I do know these things! I don't know I've been getting brain fog quite a bit lately!

Yes Ward is still the developer. A lot of his homes are NOT well made, cheap.
