Menus/Recipes for dinner

With the economy the way it is... I am certain more of us will be cooking dinners in our rooms on upcoming visits.... how about sharing favorite menus and recipes for those dinners to make it more exciting? One of my favorites is cooked or grilled tilapia with salsa on top...
 
we're more pasta people - cheap and easy way to fill up two growing boys. Favorite would be chicken fettucine alfredo. Even with a jarred sauce the boys love it - it's MUCH better if you make your own sauce though.
 

We mostly eat sandwiches for dinner. I make breakfast in the room, we eat lunch at the parks, and then eat dinner in the room. Sometimes I will make pasta with salad and garlic bread. I love having a kitchen but I only do easy cooking on vacation.
 
I'm a fan of crockpot meals -- yes I have brought one down in my carryon bag. There's a great recipe thread over on the Camping Board.
 
Great idea! Crock pot meatballs are a must! I will also check the camping site. thank you.:goodvibes Any other ideas for six hungry kids?
 
I'm working on my list....am looking forward to see what others post. I've bought the Krustaez belgian waffle mix to try out in our Mickey waffle iron(read about that on another posting about cooking). Plan is to bring that down for breakfasts.....am thinking of taking a softsided cooler with sandwiches/chips/drinks/snacks into the parks....then for dinner....we've talked about grilling, but I'm a little concerned about cookingon charcoal(we use gas here). I know I'll do tacos one night(made with ground turkey, soft shells).....I'm still thinking....
 
Crock pot meals??? Haven't ever seen a crock pot in a TS.

We were at a TS for Christmas, which led to the cooking of a turkey and stuffing which gave us several days of quick and easy follow-up meals from the leftovers (sandwiches, hot turkey and gravy (from a package), etc.). It was kind of a stay-at-home day, not likely to happen at WDW, tho. But one day of cooking made for easy meals for several days.

Lots of easy to fix things are great -- jarred spaghetti sauce with frozen (turkey or other) meatballs; shrimp and bagged salad, chicken baked with BBQ sauce, etc. We have a car and make a grocery run (and haul stuff along in a cooler). Go for simple, using some prepared things that are not loaded with bad stuff. The prepared bags of salad stuff (lettuces, shredded carrots, spinach, broccoli slaw) are wonderful when traveling -- add some shrimp, or leftovers from a store-bought roasted chicken.

(I don't live to eat, I just eat to live -- so simple non-gourmet works for me. I don't do much in the way of ADR's either -- too restrictive, and too much [expensive] food).

I may have to think about taking along a crock pot, tho -- that sounds handy. (altho getting it ready to go might interfere with getting to rope drop -- or not, mine has a separate bowl, so I could load it up the night before!).
 
Another crock pot fan - although mine in is my OL - Chicken and salsa rice - SOOOOO easy - Chicken breast, 2 cups rice, jar of salsa and a can of chicken broth - YUM!!! I add a little sour cream and cheddar - DH likes to make wraps - I throw mine in an bowl and am happy!!!:cloud9:
 
We go for quick meals so before leaving (we drive from NC) we cook ground turkey up and freeze it and we grill chicken breasts and cut and freeze it as well.

We eat chicken quesidillas and taco salad. We buy the other stuff down there but make our meat at home with our own spices etc. We also buy prepared meatballs but we cut them up and pour manwich over them. YUMMO!

We also do crockpot meals when traveling with family as they are in Florida and it is easy for them to bring it. We cook a roast in it and we have done stew in the winter and just make frozen or canned biscuits to go along with it.
 
One of my easy at home meals is to add some cut up pre-cooked roasted chicken & maybe extra veggies to a few cans of Chicken A' La King mix & server over puff pastry (found in the frozen dessert section).
 
We use the grills at OKW often, Grilled Marinated Tequila Lime Chicken, make extra and serve them on top of ceasar salad for another lunch or dinner. Steaks w/ Montreal seasoning and blue cheese on top. Another favorite, grilled ,bacon wrapped jumbo shrimp w/ BBQ sauce. Instead of mashed potatoes, mashed cauliflower w/ gorgonzola (Yum), it's easy. Publix sells pizza dough already done, stretch it flat and top it w/ carmelized onions, tomatoes, goat cheese and olives of your choice. Season chicken breasts w/ taco seasoning, add a little chicken broth and cook till tender, and serve over rice mixed w/ salsa, chopped green olives & sauteed onion, then with leftover chicken you can make shredded chicken tacos. I'm lucky , we have no picky eaters and I love to cook and these recipes take no time to do. I rarely bring anything from home other than coffee and filters, on the day we arrive we plan and stock up. I've brought my crock pot to feed the masses for the family reunion, otherwise I use what's in the villas plus disposible pans.
 
OHHHH Beaslyboo... I am coming to your house for dinner!!!!:rotfl: Those were TERRIFIC ideas... just what i was hoping for. I am the queenprincess: of marinating... so I plan on stocking up on my lawry's before heading down. Also... we have a local farmer who by and far has the sweetest white corn I have ever had in my life (no jokes... turned 50 this year... know it is a LONG time:rotfl2: ) so I plan on bringing down about 50 - 75 ears of corn. It is that good!!! Plus salads are always a great meal in the summer. I make this salad with spring mix.. prosciuto and grilled peaches that is delicious.. Also a strawberry and walnut salad that my husband also loves.

I also make a flank steak marinated overnight in italian dressing that is just as tender as can be the next day and wonderful on the grill. I am concerned about the charcoal vs gas grills also... will try hamburgers and not steaks the first night in case it does not go so well!
 
Crockpot, sounds like just the thing I need to put in my OL.:thumbsup2 We are brand new DVC members and don't know how the grill thing works?? I am asuming they AREN'T out on your decks!! Does anyone know if there are going to be any at BLT and do you have to reserve them etc.:confused3 We are huge on the grill thing, but I guess I could also put a "grill pan" along with the crockpot in the OL.

You have my attention, I love prosciuto! Those salads sound delish. DS(12) loves salad of anykind. At home we use a gas grill, but the flavor of using charcoal is really quite different, reminds me of when I was a kid.

Note: I don't know if BLT will have grills, picture it, elevator w/ a plate full of steaks etc.. This is one one more reason I prefer the layout of OKW to the Hotel type of DVC like BLT & BWV. Just an added perk.

All I know is, "I can't wait till June"!:yay:
 
Beasleyboo... here is the recipe for the salad...it actually calls for arugala but i use a combo of spring mix and arugala about 50/50

dressing
1/4 cup of balsamic vinegar
2 tbsp of honey

1 tbsp evoo
1/4 tsp fresh ground pepper
dash of kosher salt
10 cups of trimmed arugala (about 10 ounces)
2 ounces of thinly sliced prosciuto (i use just a little more)
3 peaches ptted and each cut into 6 wedges
2 tablespoons of crumbled goat cheese (i wing it here also.. i have used blue and feta cheeses)

bring vinegar to a boil over medium high heat in small saucepan. reduce heat and simmer until vinegar is reduced to about 2 tbsp. remove from heat and stir in honey. bring to room temperature. this will be your dressing!

in a frying pan... cook prosciuto to a slight crisp. You will be crumbling/breaking over salad. do not overcook.

prepare grill to high heat make sure grill is previously sprayed with cooking spray or peaches will stick! grill peaches for about 30 seconds on each side..or until grill marks appear. You still want peaches to be slightly firm.

combine oil, pepper and salt in a large bowl, stirring with a wisk. add arugula/spring mix tossing to lightly coat. Arrange mixture on platter placing peaches and prosciutto over. Add crumbled cheese then salad dressing.

Enjoy!

This sounds divine... I have never had prosciuto... what can I compare it to?
 
Momsoftwoboys... prosciutto is italian bacon. It is more like a sliced luncheon meat than what traditional bacon looks like. It is also used in sandwiches. You can purchase it at your deli counter at the grocery store. we also cut it into small pieces sautee it and put it in peas with pearl onions.... very yummy!! Can you tell we like to eat???:goodvibes
