memorial day...which park?

Leaving for WDW the day after school is out for a Saturday-Thursday trip. Staying at BLT and arriving early, leaving late so I can do MK for our arrival and departure day. Want to do 2 Epcot days (one morning with rope drop and one later on with mostly world showcase and Harmonious) and one DHS. I am trying to decide what to do on Memorial Day. Which parks are crazy crowded? Should we just do Disney Springs and resort hopping that day?

We went Thanksgiving week and it was crowded but manageable. We had park hoppers and used Genie+ and ILL. With such a short trip would say do a park on Memorial Day either a day at AK or another day at HS in case you have trouble getting ROTR.
