Melting Pot Reservations

I did a search and found many comments on this restaurant, but my question is a little different. It's my girlfriends birthday and I planned out an appointment and Mandara Spa in the Dolphin at Disney for 4:30 (which will take a few hours) then dinner at Melting Pot at 9 pm. Problem is they close at 10 pm and I really though nothing of it, but as I search more and more I see that a normal amount of time spend at Melting Pot is 2.5 to 3 hours. Now I know they will gladly stay open past 9 pm, but I am afraid that the service will drastically decrease when they are working overtime (from previous experience in the food industry). Should I think nothing of it and stick with the reservation, or try and move the time back to maybe 8:30 or 8:00 or maybe another restaurant? Reservations go up until 9:45 so it can't be that bad, right?
 
I love the melting pot. Good Choice. They probably close at 10 because they know that it is a 2.5 hour dining experience. If that is when you want to eat, stick with your reservations, if you feel uncomfortable, change them. They are there to serve you, not the other way around.
 
The very first time I went to the Melting Pot (I've been there many times) was a 9pm reservation. We didn't get out of there until after midnight and even then the place was in full swing. If it's a good restaurant, you'll get good service no matter what time it is. I'm guessing the 10pm closing time is the last time they let people start coming in. There's no way anyone is getting out of that restaurant in under an hour unless you're just getting dessert. You'll have a great time! It's my favorite restaurant.

One thing: is your girlfriend getting a facial at her spa appointment? Usually facials leave the skin red for up to a day. It might not be a good idea for right before dinner. Just a thought.
 
That's great to hear, I would have hated to make so many last minute changes.

And about the facial, no... I just set up a massage and manicure/pedicure combo. I didn't know whether to set up a hair appointment after everything because I'm not too sure if going directly to dinner afterwards would be a good idea without some time to get ready (for her anyways).
