Due to health concerns, We recently had to cancel our New Years Eve
week trip to Disney World. We plan to reschedule in late Spring / May of 2020
Because of issues with severe dehydration, I receive multiple vitamin, nutrients and electrolyte
enriched saline infusions at our local hospital weekly.

Is there a service that could provide these infusions at the Resort, perhaps overnight?
I don’t want to spend 8 or more hours at the local emergency room, but I’d need to find
a way to get the infusions.
 
I’m not sure if anyone has asked this before.
I don’t know about overnight at the resort - depending on your medications, it may need more monitoring than can be done outside of a medical facility.
You would probably not need to be in an Emergency Room. There are infusion therapy facilities where you could probably arrange to get it done.
This one in Celebration, would be pretty close. There are others, but this popped up first in a search.

I would start out talking to the place you currently get infusion. They may be aware already of a place in the WDW area and may have helped arrange for it in the past. They would need to help with orders, communication and insurance billing where ever you go.
 
I would discuss options with your healthcare provider.
Maybe there is something they can send with you to keep hydrated.
I don't think that a 3rd party is going to come into your hotel in the middle of the night to provide an infusion.
You'd likely need to go to the hospital for that.
There's also a question about cost as I am not aware if your insurance would cover something like that.

As a healthcare provider I have a few thoughts.
It is Highly Unlikely that OP could Ingest an adequate solution orally on vacation that they can not take at home. They need infusions.
It is very possible that a caregiver will come to you overnight. Healthcare is provided 24/7. You need to investigate and see what can be arranged, but it is definitely possible.
Insurance coverage is definitely a question.

They could have a port etc and meds that they hook up themselves at night.

Ok. I made an assumption,sorry. But again, i believe it is highly unlikely that that is possible on vacation if it is not done at home.
