meatloaf recipes??????????

I still have a few hundred pounds of meat (read this MOOSE) in the freezer and any one have any good meatloaf recipes or ground meat recipes.....I would sooooooo appreciate some really good tried and true ones..... :dog2:
 
We used to have a favorite for years UNTIL we found the Boston Market Meatloaf recipe from topsecretrecipes.com.

Years ago, they used to let you see & print the full recipe for free, but now it cost 79 cents. Everyone rates it as 5 star. IT IS ABSOLUTELY WORTH 79 CENTS!! I like it because there is no bread filler. Very moist & flavorful. We double the batch & freeze the extra slices.

I haven't tried googling it, but I wonder if it's posted anywhere on the web for free. Heck, I even mighted have posted it on this board years ago. LOL

Upon looking further at some of the OTHER google results, the recipe has been changed here & there. The above link is a copy of the original recipe as figured out by "top secret recipes". I just saw some versions with breads crumbs or V-8. yuck.
 
I usually use this w/ ground turkey.

1# meat
1 onion, chopped
2 cloves garlic, minced
1 egg, beaten
1 c fresh mushrooms sliced or 1 small can
1 TBSP Worschetshire sauce (sp)
1 TBSP soy sauce
2/3 cup bread crumbs
some Italian seasoning
salt and pepper

mix everything up and cook @ 350 for 30 - 40 minutes

One of DH's favorites. I usually serve it w/ rice and broccolli
 
I actually prefer my meatloaf with the bread crumbs. For years I couldn't figure out why I didn't like it when I made it (didn't taste like Mom's) until I added them. :confused3 I've since added a bunch of spices & we love it even more! :teeth:

Meatloaf
1 lb ground beef (I use 90% lean)
1 egg, beaten
¼ c? ketchup or BBQ sauce
1 - 2 Tbl A-1® sauce
1 Tbl? Parmesan cheese
2 - 3 tsp? Worcestershire sauce
several drops, maybe 1/8 tsp Liquid Smoke®
½ tsp cardamom
½ tsp coriander
¼ tsp ginger (dry, ground)
1 tsp garlic powder
bread crumbs

Mix everything together except bread crumbs until evenly distributed. Add bread crumbs until you can make a loaf out of it without having it stick to your hands. I'm guessing at least ¼ cup. I usually have to add several times until it "looks right" as my grandmother would say.
 

Does anyone happen to have the Bisquick Meatloaf recipe? It has been several years since it last appeared on the box. My fav right now is the McCormick seasonings cooking bag meatloaf - Very easy clean up, and great for sandwiches the next day.
 
moose and venison is 99 percent lean .....so I have to add some fatty hamburg to keep it together.....but it is delicious.......thanks for the recipes
 
I use

1 1/2 lbs ground chuck
1 med onion
1 green pepper
2 eggs
approx 1 cup quick oats (usually add so it stays together better, can use more or less depending on what you want)
approx 1/2 bottle of ketchup
salt and pepper to taste

mix together, put in a pan and put remaining half bottle of ketchup on top, bake in a glass pan at 350 for about an hour
 
I don't really use a recipe but here is what I do....
1 box of stovetop stuffing
ground meat
ketchup
onion soup mix
a-1 sauce
eggs
mix all togther bake and its yummy!
I never use recipes for this kind of thing, I just experiment!
 
I also use McCormick Seasoning mix, but I use the one that doesn't come with the cooking bag. It calls for 2 lb of ground meat; I usually use 1 lb of ground beef and 1 lb of ground turkey. It's really good and EASY!
 
This is my absolute FAVORITE meat loaf: Good Eats Meat Loaf. I've made it both by following the recipe (combo of ground chuck and sirloin) and by using ground turkey, and adding a little extra fat (butter). Both types of meat turned out delicious! We usually make extra glaze, and cook it on the stovetop - it makes a nice, thick sauce for dipping.
 
My Meatloaf - the kids are crazy for this!! they are glad its getting to be fall and I want to cook again..

1lb ground meat
1 big squirt katsup
1 egg
1 slice bread crumbled
1 cup (or more) cooked rice
some chopped onion (minced if the kids are home)
2 slice am. cheese broken all up
few shakes onion and garlic salt/powder
a few shakes of pepper
mix together well, bake at 350 in loaf pan for about an hour

About 2 weeks ago I was actually getting tired of summer foods. (chicken/hot dogs/hamburgers on the grill & salads :rolleyes: ) Usually I carry the summer menu as long as I can!

Anyway, I decided to make a meatloaf in the crockpot because it was way too hot otherwise. Believe it or not, it worked out really well! In fact, I may do it that way even during the winter. ::yes::
 
My Mom always made meatloaf this way:

1 lb chopped meat
1 can Campbell's chicken with rice soup
1 onion, chopped small
garlic powder
pepper
1 small can plain tomato sauce (like Contadina or Hunts)

Mix meat, soup and onion together in a mixing bowl. Drop it into a glass baking dish and shape it with a fork into a long loaf about 2 inches thick, making sure to press the sides together. It should be very moist. (make sure you don't go over the 1 lb of meat or you will need more soup) Sprinkle with garlic powder and pepper. Pour can of tomato sauce on top and cover with aluminum foil. Bake at 350 for about 45 minutes.

Now that I am an adult, I have never seen anyone else make this meatloaf. All the other meatloafs I have eaten are heavy and sit like lead in your stomach! This is a light but hearty meal. My kids love it this way.
 
Deb -- how long did you cook it in the crockpot,i assume on low? did you just use your normal recipie ? I am very interested in that!
 
Try Recipezaar (can't remember the address but google will find it) for free recipes - very good ones too!

I'm at work at the moment :guilty: so don't have exact quantities, but I use half and half pork and beef. Instead of breadcrumbs I use soaked Bulgar wheat (low GI so keeps you full!) and a packed of Paxo stuffing, plus an onion and a little garlic.

I serve this with mashed potato and, instead of gravy, cream of spinach ( a Hungarian recipe - you could use a very thick cream of spinach soup perhaps).
