Meatball recipe anyone?

my friend's mother has this amazing meatball recipe.......she refuses to let me have it:(

hahhha, no really! she has a secret ingredient in there that she won't even tell her daughter, my bestfriend.

wondering if anyone had a good recipe?
 
i mix up 1/2 cup of fresh bread crumbs with a splash of milk, then add 1/4 cup of finely chopped parsley, 1/4 cup of parmesan cheese, ground turkey or beef, salt and pepper. i make this mix into golf ball sized meatballs and fry them in a little bit of oil. yummy!!

sometimes, instead of soaking the bread crumbs with milk, i use red wine.
 
I also think that if you cook your meatballs in the sauce from the beginning instead of cooking in the oven first.......the flavor is different......I use
two pounds of meat....
one egg beaten
mixed into meat
add spices that you like....garlic powder...italian seasonings
one cup or more of italian bread crumbs
then form each ball about an inch or so....I like that size
and drop into your sauce......
do not mix the meatballs yet.....let them settle for a few minutes and simmer
after a few minutes ...very gently move the spoon around them and let them settle into the sauce more
stir occasionally and cook on low for 6 hours
Ilove the longer it cooks
 
I agree with Pumba--I think that cooking them entirely in the sauce makes a huge difference! I use a pound of ground turkey and add: an envelope of onion soup mix, fresh minced garlic, seasoned bread crumbs, and an egg. I form the meatballs and put them in my crock pot, cover with sauce, and forget about them until dinner time.
 

My Italian MIL makes the best meatballs, she says the secret is to use Locatelli cheese and to put two ladels of sauce into the meatball mixture! This is how she makes hers:

2 ladels of sauce that has been cooking
2 lb. ground beef
2 eggs,
Italian flavored bread crumbs
Locatelli grated cheese (this is the name brand of romano)
dried parsley flakes
garlic powder
salt and pepper

Put the 2 ladels of sauce into a bowl and let cool, then add the rest of the ingredients and mix well. If mixture is too loose add more bread crumbs, with wet hands form into balls, fry to brown in frying pan and a Pumba said cook in the sauce.
 
Here's my recipe - and I agree - simmer them in your sauce. Do not cook separately and then add to sauce.

1 lb. ground chuck (ground round makes them too dry)
1 egg
1/4 cup Italian bread crumbs
1/4 tsp. pepper
1/4 tsp. garlic salt
1 Tablespoon fresly grated cheese (I use Locatelli Parmesan)

Mix and form into balls, simmer in sauce.
 
My friend makes meatballs that everyone raves over. All she does is add a jar of Prego spagetti sauce to frozen meatballs. She lets it simmer all day. Tastes great - so much better than prego on top of spagetti.
 
I just used the recipe from foodnetwork.com for Emeril's cocktail meatballs and people were raving about them at my party! The one thing I changed - instead of baking them in the oven as the recipe directs, I put them in my crockpot on high for a couple of hours, then low for another 2. I only did this bc I did not have the oven space but it turned out pretty darned well!
 
Piquant Cocktail Meatballs

Meatballs:
2 lbs ground beef (very lean - I usually use ground chuck or round)
1 cup corn flake crumbs
1/3 cup dried parsely flakes
2 eggs
2 T soy sauce
1/4 tsp pepper
1/2 tsp garlic powder
1/3 cup ketchup
2 T instant minced onion

Sauce:
1 1-lb can jellied cranberry sauce
1 12oz bottle chili sauce
2 T dark brown sugar
1 T bottled lemon juice

Combine all meatball ingredients. Roll into balls and place into shallow baking dish.

Combine all sauce ingredients in a saucepan over medium heat. Cook until smooth. (I usually take a knife and cut the cranberry sauce up into small pieces so it melts more quickly.)

Pour the sauce over the meatballs and bake uncovered at 350 degrees for 30 minutes. Makes 60 meatballs (depending on size you roll them into).

Yummy!!!
 
Blessedmom, thanks for posting this. I tried it on 12/31 and it was yummy (although I did substitute Italian bread crumbs for corn cereal since I didn't have any).
