My mears confirmation I received for pick up time is our landing time. Is this okay? I know it'll take us some time to get our luggage before we get to the Mears bus. Thanks!

Yes, they always use the landing time for pick up from the airport even though they know it takes a while for you to get your luggage and get to the bus. No worries.

When I do the reservation it asks me for how many bags. What if I put 5 but it ends up 4 or 6? Is this just so they have an idea?

Mears Connect or a private car? For a private car, the amount of luggage absolutely matters because it means you can be in a vehicle of a different size.

I wrote to them yesterday and they responded immediately (which I loved) that when on connect they just need an estimate.
