You'll get all sorts of opinions on the value of using vouchers to pay for dining in WDW. If you compare the cost of the vouchers vs. the quantity & prices of the food, you'll either break even or come out ahead in most restaurants. However, if you're not the type to order an entrée, sidedish, dessert and beverage for your meals, then you may not really be saving all that much money.
You can split your food between members of your party to save a little. However, even without using vouchers, you can still split your meals.
Using vouchers will limit you to dining at certain restaurants. And with the VKLs, you are also limited to lunchtime dining hours. If making PSs and sticking to them is a normal part of your touring plan, then this is not a problem. If you like a more free-wheeling approach to visiting WDW, this, may not be a good choice for you.
There is also the added advantage of having your meals prepaid.
I would suggest checking the link that HaleyB gave you and also checking the menus at
AllEars.net - Menus From Around the World . You can get a good idea of what food in Disney costs, what's available and if the vouchers would be a good idea for your family.
Personally, I'll be using all 3 types of vouchers on my upcoming trip. 4 breakfast vouchers for a character breakfast, several VKLs for mid-day meals and several Q&Cs for light dinners. We usually eat our large meal around 2 pm anyway & almost always make PSs. So, the vouchers will be a little more economical for us.
