Meal Planning Sunday

Someone really needs to invent a grocery store where you can shop individually for everything. Like what if I only need 1 carrot, half a bell pepper, a half cup of stock, and a tablespoon of heavy cream??? I would gladly pay by the pound for the exact quantity of things I need. Single people throw away SO much food.

What I used to do when I only needed small quantities of items like carrots, celery, spinach and other fresh ingredients, was to shop the salad bar. It allowed me to only buy one celery stick, if that was all I needed, and not have an entire head of celery go to waste. Of course that doesn't work for things like cream, but for chicken stock, I just pour my extra into an ice cube tray or portion it out in small plastic containers, label it, and freeze. I have also found I could purchase one-cup portions (there are four little cartons in a box) of chicken broth from Pacific Natural brand at our grocery store, which is very helpful when you only need 8 oz. instead of the standard 14.5 oz. in the cans.

I'm single and I don't throw away much food at all. When I meal plan, I make sure that it's done in a way to use what I need to buy. For example, I had to buy kale for the stuffed acorn squash I am making tomorrow. The rest of the kale will be used in salads for lunch during the week. If you plan it right, you shouldn't have an issue.
 
This is very true...I just dont plan it well! I really really struggle in the meal planning area.

I used to have trouble too, but I slowly went from just making myself do it to actually enjoying it. It took some time, I won't lie, but it is SO worth it. The amount of money alone that I save by meal planning is more then enough to make me want to do it. I sit down and plan out two weeks at a time as I shop every two weeks (due to how my paychecks come). I also have to plan around a very random and difficult work schedule as I work 4 part time jobs.

It really comes down to WANTING to do it and just making yourself sit down and actually do it.
 

So- I was SO busy this weekend I was not able to get on here and write out my menu! This has actually been helpful when it comes to staying on track with my meal planning!

Monday: Chili and all of the fixins'
Tuesday: HomeMade Chicken Pot Pie
Wednesday: Bubble Up Sloppy Joe Casserole
Thursday: Thanksgiving!
Friday: Leftover Thanksgivng! :)
Saturday: Out to dinner with my little brothers
Sunday: Turkey Burgers and Sweet Potato Chips!

It has helped me a lot! If I plan in advance, I tend to stick to my meal plan. The only time I really eat out is when i'm ill prepared.
 
I live in a household where sometimes the meals aren't so healthy. Living with a very picky eater child has been a huge eye opener and head banging experience.

So we now have a hat with a bunch of meal ideas in it. We all wrote down our favourite meals, and added them into a hat. I also included one piece of paper that says "Try Something New".

This week we pulled:
Chicken nuggets and fries.
Spaghetti Squash
Try Something New

So our week looks like this:

Monday: Chicken nuggets and fries.
Tuesday: Date night, eat out at a restaurant or the theatre.
Wednesday: Chicken and apples, served with noodles and butternut squash - this is a new recipe I found in a Weight Watchers cookbook. It looks pretty tasty!
Thursday: Bacon and spinach spaghetti squash with homemade garlic bread
Friday: Pizza/delivery
Then the weekends are made up of leftovers and smaller meals, like soup and sandwiches.

I totally even forgot what day it is. My week goes by what job I have to be at and when. Most of the time I would never be able to tell you the actual DAY.

Sunday: Slow Cooker French Onion Soup
Today: Leftovers
Tomorrow: Leftovers
Wednesday: Fish taco bowls
Thursday: Thanksgiving, eating out
Friday: Chicken wings, pasta, cheesecake dip
Saturday: Leftovers
 
We are winging it this week, haha! Tonight we're having leftovers. My hubs only has 2 days of work (today and tomorrow) and we'll be driving in to my parents Wednesday early afternoon - Bill and I are cooking the entire Thanksgiving :scared: So I'm sure we'll eat with them Wednesday night, Thursday Thanksgiving, Friday leftovers....we're making Holiday Turkey sandwiches with leftovers!!:lovestruc I'll chime in on Sunday with next week's meal plan. Happy Thanksgiving, y'all!!

My plan last week went out the window! I'm hoping to keep it together enough to follow my plan this week, especially with the holidays! :)
