Meal plan with DVC

We will be going to WDW for a week in December. I was wondering if we decide to go with the dinning plan do you have to have it for your length of the entire stay? I was thinking it would be better just to book a five day plan if that's possible?

You have to buy it for the entire reservation. So the only way to get a 5 day dining plan is to have a reservation that's 5 nights, and the rest of your trip on a different reservation number. Your dining credits would expire on the 6th not.

It's for your length of stay. If you changed resorts you could do 5 days with plan and 2 days without. Depending on your party size it might be cheaper to by tables in wonderland card

It is for the entire length of stay for the reservation it is added on to. What we generally do when don't want the meal plan for our entire trip is do a split stay and only add the DDP to one reservation. This has worked well for us.

Thank you, so my next question is we are staying at AKV and we have two people sating with us for the first 5 nights we then are hoping to knock our two bedroom villa down to a one bedroom. Is this possible to do and would that count as a new reservation? I really appreciate all your help!

While you May need to change rooms, they're usually pretty good at keeping you in the same villa if you plan accordingly. Each component is separate and you could get the DP for one or the other components is OK or even different plans for different components.
